I forgot to post these but I did two beers with this malt. A rye bock and a saison. Both of the fermentors looked like this after about six weeks in. Weird clumps on top. Interestingly after the head on both beers dissipate a little the foam also has this shape. Very interesting malt indeed.
Might look like an infection from the picture but it’s actually yeast/protein clumps.
