As someone in the peanut gallery, have they offered/given the shelburne water profile, so that you know what their water is, and could match it accordingly?

And you are definitely not restricted to you own tap water: Hop Springs Eternal, which took home bronze and a brew on their system last year, was brewed using very hard spring water. I don't remember 100%, but I imagine they adjusted the water for that brew. ¯\_(ツ)_/¯

Don't get me wrong, it is still a very fun comp! Just frustrated by that one bit.

Also from the peanut gallery... there's a very large gypsum mine here in Nova Scotia. Surely you would be able to add that to your recipe and still be able to consider your water to be "local".
On tap:Mango Berliner Weisse
Bottled: Baltic Porter, Brett Saison, Dumb Idea Stouts, Sahti
Fermenting: NEDIPA
Planning: Too many to list
