SMaSH Saison

My contribution to the June 2015 SMaSH exchange.

Vital stats:
OG: 1.052
FG: 1.005
IBU: ~25 IBUs

For a batch just shy of 20L:

4.5kg Pilsener malt

Decoction mash 45*C-55*C-63*C-68*C, mash out at 74*C and batch sparge.

Styrian Goldings additions:
5g (100min)
10g (30min)
10g (20min)
15g (15min)
15g (10min)
15g (5min)
30g (1min)
30g (steep 10min)
30g (dry hop 3 weeks)

Made a 2L starter from a vial of Wallonian Farmhouse yeast from The Yeast Bay. Started fermentation at 20*C and raised temperature by 1*C every day up to 26*C. Held there until active fermentation was complete.

Added corn sugar at bottling to achieve ~2.5 volumes.

I'm glad I could try this, I'm planning an ESB for tomorrow (if my yeast wakes up) and was planning on using some of the styrian goldings from the last group buy in it. I like how much flavour and colour this has for just pils malt, from the decoctions. It doesn't taste as thin as the low FG would have you figure. The hops are nice too, I think I will end up using them.

Good job on this beer. I really liked it. I'm getting some spicy notes from it. Would this be from the hops or yeast? Perhaps a little of both? To be honest i haven't tried many saisons. I'm glad this one came in a large bottle! Cheers!

I think that the spiciness is coming from both. The hops are said to have a distinctive spicy flavor. Here is a description of the yeast:

I get just a little bit of the slight smokiness that the description mentions, so I would believe that a subtle layer of spiciness is coming from the yeast as well.

Glad you enjoyed it. Saisons are one of my absolute favourite summer beers and they pair fantastically with food.

I'm enjoying this. Doesn't have some of the flavor notes I might normally expect from a saison, but also doesn't have a bunch of the ingredients that you'd normally put in a saison ;)

Definitely some complexity to the flavor and I am getting some of the spiciness others have mentioned. Well done.
