Sampling your beer tonight - tasty beer! What hops have you got in there? I find that I'm tasting them more than the raspberries, but then I get the raspberry flavour at the end...

Kegged my Raspberry Cream Ale last night. I used 1.2 kg (two 600g packages) of IQF raspberries from Superstore. Just thawed em and checked em in the secondary.

Seems tasty! Not too tart, good raspberry aroma.

Bugger, bugger, bugger. I had two of these left. Greg told me it would go south sooner rather than later, because I blended the frozen raspberries in a food processor and chucked them in. I was thinking of sending one to New York, but thought it would be too old, so I poured one. It's delicious still. Note to self. Raspberry blondes are keepers. It was brewed on the 18th July.

Greg, you said you were wrong once, that's twice now! :slap: :lol:

I think it's the acidity from the raspberries that helped it keep. I have younger beers that have well passed their prime in the same fridge.

I emailed New York, said I had two bottles and drank one of them. He said that's OK to send one bottle and forfeit BOS.
Yes! Totally ok. Not the first time this has happened. Go for it!

Going to be adding the raspberry to my secondary this weekend and leave it for about 5-7 days. Going to bottle it after that. Any tips on how not to get 4 dozen bottle bombs?

Be sure that fermentation is complete before bottling. Take readings a couple days apart until stable,

Cool thanks. Anybody ever use something like Splenda to "sweeten" a fruit beer? I don't think an artificial sweetener would ferment out would it?

I've used lactose to back sweeten a blackberry cream ale last summer...haven't used splenda

I might try a few bottle with some Splenda. I'm not going to be drinking any of this beer anyway. My wife I think would prefer a little sweetness. Might be cool to try as an experiment.

My beer was in the primary for two weeks. I racked it onto about 4.5 lbs of raspberries on Saturday. Should I be expecting another krausen to form? edit - it hasn't formed yet.

Brewed a blonde ale on November 20. Racked to 1.5kg of thawed whole raspberries on Dec. 1. Cold crashing as we speak in preparation of bottling tonight (for the wife of course!) I noticed at lunch that the raspberries still haven't fallen out, but they lost their color 6 days ago.

Comments or suggestions? I was planning on cutting a piece of sanitized cheese cloth (BIAB bag) and maybe doubling it over the end of my autosiphon; then just continue bottling as per normal.....

My raspberries are always floating on top. I just use my auto-siphon and haven't had any issues or need to use cheesecloth.

Raspberries fell out after 24hrs @ 34f. Going to just bottle as usual with no strainer. Thanks man.

Beer is amazing. 1.5kg per 20l worked great. Dry hopped for 7 days and then cold crashed for 2.

I wash the blender bowl, bowl lid and blade in dishwasher on sanitize setting to sanitize. Then I thaw bags of frozen raspberries, dunk bags in starsan before cutting open. Then blend them before pouring in on day 4 of ferment. By day 7 they have totally settled out and beer almost clear. I keg on day 7 and keg condition at room temp for another 7 days before chilling and carbing. Several golds and no infections, even year old stuff is still great.
