2018 Advent Calendar - December 11 - Brett Pale Ale

Started out in the table beer range, but the Brett attenuated a little more than I anticipated.

OG: 1.041
FG: 1.005
ABV: ~4.7%

Viking 2-Row - 49%
Viking Wheat - 28%
Oats, flaked - 11%
Spelt - 7.5%
Acid malt - 4.5%

Magnum - 9g @60
Cashmere - 56g @0

Cashmere -56g (dry hop 4 days)

Yeast Bay Amalgamation (slurry)

Brewed: October 5
Bottled: November 18

Cam, this was delish. Drank it tonight while brewing a pale ale. That acidulated malt really works well... we could sense the Brett funk but knew it had something else in it to give it that nice sour taste... gonna have to try that sometime.

I would have guessed a higher ABV. I don't often like anything below 5%, but I loved this. Pretty colour too. Thanks for the share.Image

Thanks Greg! The acid malt was in there to drop the initial pH down as Brett is said to throw off more pineapple, tropical fruit flavours at a lower pH. But it could have also resulted in an overall greater perception of acidity for sure! Glad some Brett came through and you enjoyed it.

Nice Brett character as well as hop presence. Body has the wheat/oat presence. I get maybe a touch of oxidization but that could be spelt as I don't really know what that brings for flavor. Solid beer

I tried tasting this blind and had a lot of trouble figuring out what it was. The Brett is very present in the aroma and the flavor and works brilliantly with the hops, but I couldn't decide whether it was a saison without much saison yeast character or what. Checking the recipe and seeing that it's a session-ish pale ale made everything come together. I could murder several of these on a hot day in the summer; super-refreshing. If I had to nitpick I did find it a lingering graininess on the back end, but I was mostly too busy enjoying it to worry about that much.

This was nice and thirst quenching! I've been wanting to do a beer with Brett and haven't really made the plunge yet.

I have no complaints, it's rare I drink something with Brett and dont enjoy it. Thanks for the beer I wanted more!

I was surprised at how much tartness you got out of the brett but now I see that you lowered the pH with acid malt. This was a great beer. Super refreshing and tasty!

Very much enjoyed this one, both on it's own merits and as a break from the string of stouts and porters :lol: (I know, I contributed to that). Tart and refreshing, this would be a great summer brew. Thanks for sharing.

As usual, this beer exchange continues to prove that I can enjoy the hell out of a style that I wouldn't usually like. Great job Cam, very impressive that you were able to put so much flavour in a <5% beer 👍

How can you describe the characteristics of the cashmere hops? I have a lb of them in my freezer and I've been trying to decide what to do with them.

Definitley citrusy, a lot of lemon/lime is what I pick up.

I've used them mostly in IPAs but often paired with some other American hops so its hard to pull out Cashmere on its own. This beer I did for the exchange is solely Cashmere and I get the lemon big time!

Poured yellow and cloudy with a quickly dissipating but lingering white head with small bubbles. Beautiful nose with lots of lots of hops and funk. It's got really fruity hops, mixed in with some nice funk that I find overpowers the malt. I find the funk and the hops compliment each other really well. Finishes really quick, almost like you drove off a cliff, then a nice lingering fruitiness kicks in. Leaves you wanting another drink. Bone dry. There is something about it that reminds me of a berliner weisse, maybe it's the quick finish. I really enjoyed thinking about and drinking this beer. Thanks!

Tine to open a stand in the street in front of your house. Fun “lemonade” and such a great hot weather beer this is!

My only quibble here is that not enough of the base style shows. If there was more pale ale character it would be a lot more complex. No real hop bitterness. Smelled like a saison. Tasted a lot like a Berliner Weiss. In the end I liked it and felt it a bit Simple. Tart summer fun. Image

Beautiful pale colour and a nice rustic haze. The Acid Malt was a great idea and just the right amount I think. Enough zip to balance the malt without taking over. Brett and hops paired really well, thank you!

I love the aromas and flavours that brett and wild yeasts bring to beer. There's some very evident barnyard funk on the nose. Super light champagne/cider colour and very well carbonated. Refreshingly acidic, without being over the top. Finishes crisply with a little lingering funk and lemon zest.

It's hard to describe, but do wish there was a little malt or body in the middle somewhere for some chew. Still, a very enjoyable beer that highlights wild yeast.
