APA Thoughts?
Here's a recipe im thinking about for an APA.
9.5# Canadian 2-Row Malt (78%)
1.5# Melanoiden Malt (12%)
0.75# Munich Malt (6%)
0.5# Victory Malt (4%)
OG 1.055
8 SRM
Not sure what hops to go with. I have the following in my freezer:
Apollo, Nelson Sauvin, Galaxy, Cascade, Summit, Columbus
I was thinking a single hopped columbus and shoot for ~40 IBU.
Thoughts?

Edit: I agree with X - might be a little heavy handed on the melanoidin

I'm not so big on all the melanoiden, but columbus all the way is killer. Look at my WTF Pale Ale recipe.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.

maybe ill go a bit simpler and drop the melanoiden and stick with munich or maybe vienna instead.

up to 10%, tho I've seen recipes where it comes close to 20%

Melanoidin is fabulous malt and will add great complexity to any APA IPA DIPA DOPPEL-DUNKEL-HEFE-WEIZEN-BOCK or anything else you're looking for layered structure in.
12% is way too much for an APA though. It'll make it taste a bit lager-ish, read DMS.
