Post by sleepyjamie » Wed Mar 14, 2012 6:11 pm

I've never made an amber ale before but wanted to try one out. Not really sure what to use for hops. Figured amarillo would be fine. Thoughts?

It's strange, but I don't ever recall seeing a recipe that uses amber malt to make an amber ale, lol.

yeah I realized after Googling other recipies as well. I might drop the amber and subbing with some darker crystal malts.

I don't think it would be out of place, just don't use 14%. Maybe 5-7 with other crystals...?

My 11.5 L batch off all grain red (darkish amber in reality when I bottled it last Friday)

50% Canadian 2 Row 1.5 kg
34% Marris Otter 1.0 kg
8% Amber Malt 0.25 kg
7% Crystal malt 60°L 0.2 kg
1% Chocolate Malt 0.025 kg

Northern brewer 15g 60min
Simcoe 5mg 45min
Simcoe 10mg 6min
Simcoe 15mg 0min

Wyeast 1056

Will see how it tastes in few weeks. Pretty hoppy though.

There probably are some styles where it doesn't work - but I'm pretty sure those aren't in my top-ten favorite styles :-) I'm quite fond of Amarillo myself
Currently on tap: Nothing!
In keg: Still nothing.
In Primary: Doggone American Rye Pale Ale

+2 Amarillo is your friend.
A little marris otter never hurts... maybe instead of some of the amber malt
