I use the same fermenter. How do you move it? What is the thing on the back bung?

I move it uncomfortably, lol. The back bung has a swagelok fitting siliconed in there for temp probe, air in for racking.

I did a lemon/lime/orange a few years ago. It was good, not sure of the difference between the kaffir and lime zest. I've cooked with the dry leaves before, and found them pretty tame, but they may have been to old. Maybe a multi-layer lemon - lemon zest, touch of meyer lemon juice, lemongrass, lemon balm, and some grains of paradise (but no Sorachie Ace, lol). I think the versions in the lead are:

Pomegranate
Cucumber/coriander/cilantro/G of P
Dragonfruit (maybe combo with other exotic)
Roiboos chai
Watermelon/G of P
Citrus of some sort

I did up a firkin of Deadwood a few weeks ago with Kaffir Lime leaves (4g in 40 L), curry leaves, lemongrass, fresh ginger and fresh cilantro. It was delicious, the predominant flavour coming through was the Kaffir lime. The firkin blew the bung so it was never served save for a couple L that was enough for a taste or three
