0.25 kg Aromatic Malt (26.0 SRM) Grain
0.25 kg Carafa III (525.0 SRM) Grain
0.25 kg Special B Malt (180.0 SRM) Grain

Mash at 66.8 C for 60 minutes

70 Minute boil

Had a chance to try this on Friday at the tasting and I thought it was the best beer of the night! Fantastic job Tim :cheers2:
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Tim, what was your batch size and efficiency on this one? I'm looking to brew some up

That's a tough question. I had estimated for a 19L batch at about 60% for a 1.070 OG. But I was using my new large kettle and I just eyeballed it so I think I overestimated my pre-boil volume and left a ton of fermentables in the tun. I also had a crazy boil so by the end I was down to about 14L and the gravity was higher.

Hope that helps!

ps thanks for the compliments guys! :cheers2:

I'm assuming that's the Carafa III Special

Tim, i'm gonna brew some of this up this weekend, thanks for the recipe. Just one question, the mash temp above is shown at 75.2(167F), is that correct? Seems high?

Oops. Sorry that was the strike water temp. Should be 66.8 C - 152.2 F

Good luck with the brew!

Does 35L of water sound right for a 20L brew of this? I entered it into beersmith and it's telling me to add 18.89L @166.7F, then sparge with 16.28L @ 185F. This is my first all grain, and I don't have a clue

A lot of that first addition will be absorbed by the grains. I'm not sure what the exact amount of water per grain. I'm sure some of the numbers guys here could tell you.

Just go with it. I'm so sick I can hardly think straight, and those metrics are melting what part of brain that is working. Measure that mash temperature though. That's critical. And it would be nice to be at 1 qt/lb at mash-in minimum. I like 1.25.

Wow, this is going like shit. I've got it in the Boil Kettle heating up to boiling temp now...

I added 19L @ 166 and it stabilized at about 159..added 1L of cold water, brought it down to about 157, stirred until I hit 152.

Then I sparged with 15L @ 185, stabilized at about 160..I was aiming for 168.

We will see how it turns out..not going the best so far :x

That sounds fine. Hit your mash temp, hopefully within 5 minutes. Sparging at 160 is fine. Sparging for me is where I'm not worried about being too accurate. Somewhere over 160, and under 170.

I started out trying to replicate it but ended up making a bunch of changes. I now know why you all use hop stoppers! It was also bitterly cold out. I can't wait to see how it turns out.

This is what I ended up doing: (I didn't have Special B or the right hops)

Batch size 5.5 gal
83% 13.25 lb 2-row pale malt
7% 1.1 lb Crystal malt 30L
3% 8.8 oz Aromatic Malt
3% 8.8 oz Carafa III (mashed)
3% 8.8 oz Carafa III (cold steeped)

1 oz cascade 60 min
2 oz simcoe 30 min
1 oz cascade 15 min
1 oz amarillo dry hop

Estimated OG: 1.071
Estimated IBU: 67
Estimated FG: 1.018

Actual OG: 1.062

I'm not sure what caused the OG to be off by that much. My first two AG attempts were reasonably close. In any case, this is what I ended up doing to Tim's IPA. I'm excited for the final product, but questioning the logic of having two dark beers on tap at once.

I got it in beersmith at around 31SRM

Not sure exactly what it is, but it's pretty black. I'd say 31 is about right, maybe even darker.
