some unnamed Weizen

I'm planning on doing Weizen on Friday - a pretty straight forward recipe.
6 # wheat
4 # pils

hopped to 15 IBU with Hallertauer or Tettnang

I'm thinking of adding some melanoidin just for shits n giggles - your thought?

Great malt for a Witbier. Errrrr I mean Weizen lol.

Particularly good malt to use in any German style that traditionally uses decoction plus IMO Weizen should have a little colour.

How much would you use? I was thinking 4% (which would be just over 6oz/180g)

At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

So that's all I need to do? Just start dumping shit loads of melanoidin into the mashtun and a bucket full of hops into the kettle and I can open my own brewery? Sweet!

If I can get around child labor laws by making my kids share-holders I might be able to swing it. They'll need to use their next 10 years worth of allowance as venture capital though. :shifty: :shh:

Allright, so I went with 8oz of Melanoidin and so far so good. The hydrometer sample I left for the wife was a hit and she sends her thanks to you Nash for getting me to increase the Melanoidin (only to 4.75%, but a start).

Jeff Smith stopped by during my first brew of the day and we swapped some homebrews (a Cascadian Dark and an Altbier) - I can't wait to try them.
