Just finished brewing this...

Next time I will put the pineapple in a cheese cloth. I recirculate with my immersion chiller and I got a few clogs.

Smelt great. OG came in a bit low at 1.052 but I think it will be a tasty brew.

I put a festa pale ale in the fermenter last night then stumbled across this thread. It sounds amazing.

Would might you all suggest I add to the fermentor to give the festa a Hawaiian flavour? It's 23 L.

I used a large pine apple pureed in mine, however added it to the boil to ensure it was sterile.

However going into the fermenter I'd just puree it, bring it up to 160F, cool it and add it in.
As a note it takes a while to settle out.

General rule for fruit beers is 1/2 pound per gallon so 3lbs of bagged frozen pinapple would work. No need to do anything to the frozen fruit just dump it in.

Agreed...I would also look at dry hopping with some tropical flavored hops

Good timing for this thread as I'll be brewing this next week to have ready for the Saint John Beerfest. I add all of my pineapple into the boil, and find it adds a nice subtle amount of flavour to the final product. Last year, I dry hopped all of my commercial batches with Falconer's Flight. This year, planning on using El Dorado instead.

I agree. I add my fresh chopped pineapple at 15 minutes or so left in the boil. I use 10 oz per gallon. Had some tonight... Over crystalled or not it's freakin amazing. Definite difference in taste compared to the non-fruit IPA version of this. :drool:

Looking to brew this and that much crystal scares the shit out of me. Seems everyone had good results so I'm willing to try . My gut says half the crystal and drop Munich and replace with Vienna. What do you guys think?

I use Vienna now instead of Munich as well. I found it tastes better, but I still use "that much crystal"

Thanks. No issues with Munich I was just considering dropping it for this along with half the crystal and replacing both with Vienna as 24 % between the two types of crystal seemed high. I wanted to see what you guys that had brewed it thought. I wondered if that much crystal came thru.

I tried a new version of this without the pineapple and compared it to my high in crystal version. This one dropped he crystal to a much lower percentage....
Verdict, I can't tell the difference. The hops overpowers any malt flavour. At least to my unedumacated tongue

I just kegged a version of this and have tasted it however I used 1 pineapple at 15 mins left in the boil and find it lacks the taste I was hoping for.

I used frozen pineapple from Costco in secondary. I think i used 2lbs. I put it in a pot on the stove and crushed it as it heated. Once it started to bubble I took it off the stove. I put it in the fridge covered to cool and then dumped it in. it worked well for me. You can defiantly taste the pineapple.

It looked pretty close to a puree when it came off the stove. A little chunkier perhaps.
