The label does this beer justice... At first my pallet literally felt numb, I felt it a bit piney/tacky on the finish . Half way through it's now warmed slightly and its really made it nice. I defiantly appreciate the low carbonation level joining forces with the sweetness of the crystal to balance the hop punch. The hop profile is on point great hop choices - I like hoppy beer that covers the spectrum between citrus and pine like characters.

Nice and hoppy. Worst I can say is that it has a bit of oniony hop flavour which I think I am sensitive to but not enough that this isn't enjoyable.

Eric and tried this tonight while brewing some dos amigo.
Well done...the smooth bitterness lingers long enuf...the pine. ..the citrus...the aroma smells like hop candy. ..this is a great brew...and I dont normally like iipa...well done sir...thanks for sharing.

Good solid IIPA, I like the hops, just a tad boozy, but that is to be expected at 8.5%

Great beer, good balance, and as far as colour, hops and body you're really close. Plus I love a good DIPA so I'm happy right now

I've had Pliny a few times over the past year and the magic about Pliny is that there is no harsh bitterness at the very back of the tongue even though you fully expect it. What I distinctly remember about Pliny is that when you bring it to your nose you think "wow, pine, citrus, and shit, this is going to be bitter". Like those IIPAs that you taste all the next day. When it hits your mouth, you now know it'll have that lingering bitterness and you think "why is this so sought-after and urban legendary?" But then, as if there's a IIPA fairy waving her wand over your tastebuds, that "back of the tongue" bitternes you sensed never happens and you experience a smooth, very balanced, piney/citrusy overwhelming feeling of euphoria as it washes your insides with the actual nectar of the Gods, not that imitation nectar you can get at Walmart.

If you could somehow drop that back of the tongue bitterness by a notch or two while keeping the balance, it would be very very close.

Thanks everyone for the feed back and Dave for the great info. I had allot of fun making this beer. The smell of the boil was amazing. I'm sad to say I haven't had the pleasure of trying "Pliny the Elder". IIPA's are my favorite style to brew any readings I have done have led me to info by Vinnie Cilurzo & Russian River Brewing. I've heard the recipe uses hop extract but found the below link and recipe. When I saw the hop schedule I knew I had to try and brew it.

I thought I read somewhere the Russian River also uses Simcoe hop oil in the Elder recipe, that would make a difference as well.

But wow, I feel like I pulled a Kieth last night, getting all drunked up and posting on the forums! Sounds like I was in the zone, lol.

Dave's post was great. It made me want to travel to California to get the real thing. Very passionate and suspenseful describing how it was an experience drinking the real thing.

Derek, this is pretty fuckin good. :)

This is a big hoppy beer. At first I found it on the sharp, almost harsh, hoppy side but it grew on me. It's almost gone, I burped hops. Yum.

Great job.

I think it would be really interesting to experiment with this recipe with different hopping techniques.

Just trying this tonight, due to traveling for work this week. Should be working on the blog, but am drunking instead. Don't tell berley...

Simcoe hop aroma is very prominent, some pine, don't get much citrus.

Upon tasting it, the body is full, but still rather light. I see it finished at 1.009, so quite dry, and just the way I like these big IPAs. Hop Juice in a bottle!

Lots of fruit flavour, progressing into pine as well. Plenty bitter, sticks around for a while, but is not offensive.

My only criticism would be that I thought my bottle was a bit undercarbed.

Chris your secret is safe with me. lol It was under carbonated and I'll be upping it for sure next time. This should make it even more enjoyable. Thanks for the feedback. Next time I make this so in a few weeks lol I'm going to use a lighter crystal like the original recipe called for. I have some C30l so I might use that. Also I'm going to try the finish hops at whirlpool after the wort chiller gets it down a few degrees. I've got some great feed back and ways to make this monster better from Jeff/Brewnoser and can't wait to try again. Other readings I've done on this beer suggest Amarillo hops may be in the recipe. I'm thinking I might try using it in place of Centennial. :mebeer:

I am late to the party on the last few advent days due to work travel. I have not had Pliny but I am really enjoying this punch in the mouth, big balanced hoppiness....well done. X)
