Re: 2015 Advent- Dec 29th - Hoppily Ever After - Topaz Editi
I finally had this one last night. Quite undercarbed but didn't bother me too much. I really liked the mango/peach type flavour coming from the hops. I was thinking of dry hopping my next IPA with Topaz and Cascade anyways as I have both in the freezer and this gave me a good idea what to expect. Thanks!
Enjoying: Black Sheep (Dark Farmhouse with Brett)
Fermenting: NZ Pale Ale, Orval Clone, Berliner Weisse, Brett APA

Cheers. Yea I'm pissed with myself for the carbonation. Never gonna fill from a keg warm. Killed it, but glad to know it's still drinkable.

Just getting around to this one now. Lots of great hop flavours to go with the rich complex malt backbone and it still has a nice dryish finish. I'm getting a little bit of bitter astringency in the finish, but none of that harsh metallic type character that is in some dry-hoped beers. The carbonation on mine was a bit low but definitely acceptable. The head dissipated rather quickly and the beer had a cloudy appearance but that doesn't really hinder this style. Better than a lot of other commercial examples! Thanks!
