Decembeer Exchange #7 - Winter Warmer

ABV: 7.48%

Recipe was for 12 gallons.

Grains:
17.5lb Maris Otter (59%)
4.5lb Liquid Malt Extract (15%)
1.5lb Flaked Oats, toasted ahead of time (5%)
1.5lb Crystal 60 (5%)
1lb Crystal 120 (3.5%)
1lb Pale Chocolate Malt (3.5%)
1lb Molasses (3.5%)

Hops:
2.7 oz Willamette 9% (60 minutes)
.5 oz Goldings (flameout)
0.5 tsp cinnamon (flameout)
0.5 tsp ground ginger (flameout)
0.25 tsp nutmeg (flameout)

Water:
Halifax tap water, adjusted with 0.2g calcium chloride, , 0.15g baking soda and 0.5g chalk per gallon.

Yeast:
US05, 14g/6 gallon bucket, rehydrated.

I haven't, no. I've made other ones similar though, I just often tweak recipes to change the beer, or to adjust to use ingredients I have on hand already.

Enjoyed this one. Before looking to find out what kind of beer this was I guessed it would be a dunkelweizen. I guess the subtle spicing threw me off. Tasty nonetheless, I liked the malt character. It had a few higher hot alcohols but they didn't detract from the beer too much. Thanks!

I really enjoyed this. Not over the top spiced. Very pleasant. I'm a big fan of chocolate malt, so that made it extra good for me. :)

Spices were mild, I think you could have used more to be honest. I got a touch of oxidation out of it but I think it lent well to the character of the beer. Thanks for sharing

It took a few drinks for me to warm up to this one but i enjoyed it. I was a little worried i wouldn't like it after I tried Garrison's last year. I liked that the spices weren't too strong.

Second spiced beer that is good. I think it's a little boozy but that may just be the spices.

Just had this one. It's not as clean as I would have expected given the yeast. I can see what Adam meant when he said dunkelweizen. I prefer this beer the way it is and I like that it's not clean. Good job and thank you.

Spicing was pretty subtle - could have used more. Underlying beer was great, so I didn't miss the spice.

Normally don't like winter warmers...but this one is great. Spices are subtle...body is awesome. Great snow day noon hour beer.
