Braggot - Honey Naboo Boo

6.00 Gallon Batch
OG 1092, FG 1012
SRM 13.0, IBU - 50.3
10.7 % ABV

10 lbs 2 row
1 lb Honey Malt
8 oz Carapils
4 oz Crystal 120
8 oz Crystal 75
1.5 lb Rye Malt

Mashed 157 F - 60 min

1.00 oz - Falconer's Flight - 60 min
0.5 oz - Falconer's Flight - 20 min
0.5 oz - Falconer's Flight - 5 min
2.0 oz - Falconer's Flight - 0 min

7 lbs Wild Flower Honey (Cosman and Whidden) - added after the boil

US-05 and yeast nutrient and O2

Fermented at 64 F for 4 days then let rise to 72 F for another week and finally 76 F for another 3 or 4 days

2 oz Falconer's Flight Dry Hop for 4 days at 62 F

Crashed for 2 days and kegged

Samples along the way were boozy but the last sample I took today when I kegged was a lot smoother than the others. I know this isn't technically a braggot as honey is supposed to be 50% of the fermentables but I think the honey adds something interesting (mostly alcohol). I like it enough to try a full braggot next fall.

I had my first carbed sample last night. Very interesting beer. I wish I made it less hoppy so the honey would come through more but it is definitely there in the finish. I could feel it after half a small glass though, ha. Going to bottle this weekend.

I tried two samples that I bottled at the same time as the exchange bottles. One was nice, both the hops and honey were present. The other bottle the hops dropped off and I think it was a bit oxidized. Hopefully there's more of the former.

I love ff but I'm on the fence with this one. Didn't quite taste as I was expecting. I did polish of the whole
glass so it was definitely palatable.

Smell and look are great. Taste may be a something I could get use to. As for the less hops I would use more.

I enjoyed this one, could really taste and smell the honey. I've never had a braggot so I'm not sure how it's supposed to taste. I don't think I could drink them all night but I enjoyed it.

Nope definitely not a crushable beer. I've got what's left of the keg and I've been drinking it probably 250ml at at time. I'm going to do a stout braggot next time.

I finally tried this one (hard to find a good time for a pint of 10.7%) last night and thought it was great. I'm a pretty big fan of mead though.

Did not taste like 50 ibu, that's for sure.

I may have to make a variant on this for myself (different hops maybe)
