Post by Lisa J » Sun Nov 27, 2016 8:24 pm

Batch Size - 20L
OG - 1.066
FG - 1.016
40 IBU

5.00 kg Pale Malt (Maris Otter) - 80.2%
0.28 kg Aromatic Malt - 4.5%
0.28 kg Crystal 40L - 4.5%
0.28 kg Crystal 120L - 4.5%
0.25 kg Cara-Pils - 4.0%
0.14 kg Special Roast - 2.2%

Mash at 75.5C

28 g Columbus (14% Alpha) 40 IBU - 60 min

1 Whirlfloc Tablet - 15 min

1 pkg US-04 English Ale Yeast

Spice Mix:
1/4 tsp ground ginger
1/2 tsp ground cinnamon
1/8 tsp ground allspice
1/8 tsp ground nutmeg

Add half of the spice blend to final 5 minutes of boil

Pumpkin:
Cut 2 small pie pumpkins (approx. 3 kg) into wedges. Remove seeds. Place pumpkin wedges on 2 parchment paper lined baking sheets. Sprinkle the pumpkin with lots of brown sugar and bake in a 400F oven until pumpkin and sugar are carmelized. Let the pumpkin cool. Peel it and collect the pumpkin and carmelized sugar. Add the pumpkin and sugar to the wort and boil the works for 60 min, making the hop, whirlfloc and spice additions noted above.

Once active fermentation stops, taste the beer and add spice mix to taste.

Bottle/Keg and enjoy!

Just finished mine. Not a pumpkin fan but was very easy to drink. Spice was there but not overpowering. Easily have 6 of these. Thanks for sharing.

Had it last night. Really tasty. Spice was balanced, and I got kind of a toasty, bready aroma that I thought was like pie crust. Well done

I cringe when I see pumpkin beer, but this was great. Not over the top on anything That said, I would order a second in a pub.

I tried the first batch. It was great. Can't wait to sample the 2nd. On call so limiting my beer intake. Brathair Tonight. I figure tomorrow night I should be able to sneak in the first couple.

Like Sandy, I cringed when I saw pumpkin on the list as I never liked any pumpkin beer that I have tried. This one is definitely an exception, enjoyed it a lot. Great Job!

LiverDance held onto this until we could share it today. It's Sunday, the football games are about to start, so it's time to crack a few!

Light spicing, some bread/toast in the aroma too. Nice body, a bit low carb which makes it a bit thicker than usual.

Thanks very much!

Nice beer. Imo I preferred the first batch more. Great malt/bready backbone. Slightly spicy. Not picking up much pumpkin tho. With that said could drink another.

Nice beer, good spicing! I picked up a bit a vanilla although i don't see it in the recipe. How do you treat your water out there in Glen Arbor?
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Enjoyed this. Not normally a fan of pumpkin spice beers, but found the spice on this quite low which I liked. Thanks!
