Dave at Everwood has given me an extract version, so I am sure he has the all grain. Not on his site, but send him an email and ask for it specially.

I have the everwood extract fermenting right now. DAMN expensive for a 5 gallon batch, so hoping it works out

We've been struggling to get the right balance of flavour and colour over several iterations. We've hit each separately but never quite together. The previous batch missed on both accounts but was still a good beer.

Friday's brew day didn't go well so I expect we'll have to brew the same recipe again before evaluating it. Once we have something we're happy with we'll share it here.

I don't think it's a good sign that the ABV is 2.4% lower than vicars cross haha. That would be the easiest thing to get right.

Ha, True, I think they messed up the volume, should be 5 gallon and not 10.

I did up the above recipe, kegged it and I am quite happy with the results. I did an all grain version, so used 12 lbs of two row and 1.5 lbs of crystal 120, for a 5 gallon batch, the colour is right on an hop taste is similiar. The body is a bit thinner but that may have something to do with my mash temp.

Interesting. If this look is good, then I'll do a batch up. I assume the OG needs to be 1.080 because it's 8.5% and there is a lot of sweetness to it.

No flame out hops on an IPA is odd, but I will try it out this weekend. And maybe mash 154-156 for a bit more sweetness in the finished product.

I will report back with my results

I hit an OG of 1065 and a FG of 1014, giving me about 6.7%, which is fine by me, I really like Vicars Cross but a version with less Alcohol and less sweetness suites my tastes just fine.

I agree if you want something closer I would mash at the temps, you suggested, I only hit 150-152, and add more grains.

A flame out hop would be a good addition, as this recipe did lack hop flavour/depth versus the real mccoy.

I finally made mine yesterday. I missed my 1.07 target but hit 1.065. I mashed at 154 so we will see how this turns out in a couple weeks. At the 10 minute mark I added 2 oz of cascade just to give it some more kick.

The colour is bang on with the original. I held my glass up to the post boil test side by side and it was spot on.

I transferred and tasted the beer today. Colour and smell are bang on, sweetness is spot on, but the crystal is so overpowering right now. I should have flamed out some cascade to cut the crystal. Hopefully when I bottle it isn’t as strong.

I’ll have to dry hop in the next few days and hopefully that helps a bit..

What recipe did you use? The one I found on brewtoad didn't have any crystal hop. Simcoe seemed like the dominant hop.

I bottled this past Saturday. The colour is bang on and so is the taste, only less alcohol (I missed my SG)

I will be making this again only hopefully I can hit my targets next time.

I’ll be doing a side by side taste next weekend.
