WTF Pale Ale

Well, since my computer crashed, i have been working on brain power alone to build a beer. Here's what I came up with. I am using Gambinus ESB malt for this one:
18 lbs 6.1 oz Pale Malt (2 Row) US (2.0 SRM) Grain 1 89.4 %
3.0 oz Biscuit Malt (23.0 SRM) Grain 4 0.9 %
1 lbs Victory Malt (25.0 SRM) Grain 3 4.9 %
1 lbs Caramel/Crystal Malt - 10L (10.0 SRM) Grain 2 4.9 %
Around 1.046-1.048 og. No idea yet on the hops.

Going to clean out some old Columbus leaf hops:
1.75 oz Columbus (Tomahawk) [10.00 %] - Boil 60.0 min Hop 5 24.8 IBUs
2.00 oz Columbus (Tomahawk) [10.00 %] - Boil 15.0 min Hop 6 14.1 IBUs
1.50 oz Columbus (Tomahawk) [10.00 %] - Boil 10.0 min Hop 7 7.7 IBUs
5.00 oz Columbus (Tomahawk) [10.00 %] - Aroma Steep 60.0 min Hop 8 0.0 IBUs
And dry hop as well.

Aroma steep eh.. do you just leave it all sit for 60 min before chilling?

Wow, I like the looks of that. Especially the 5oz aroma steep. I'm also curious how that works...

The aroma hops go in at the end (flameout), and I start chilling about 2 minutes later.

Figured as much, it was just the 60 mins that threw me off, but I guess by the time you'd chill and whirlpool that's how long it would be.

Beer is rocking away in the basement at around 63f. Said fuck it and threw in the whole pound of Columbus. Whatever was left in the bag, I just started chucking in from 5 minutes to flameout. Wort tasted good, so we'll see what the beer is like...

I set the hydrometer where it couldn't possibly get knocked over and fall to it's destruction.

Is that instead of a vorlauf or in addition to? Our technique has been to grab 3litres 3 or 4 times from our mash and dump it back in to help settle the bed/clear the runnings. We do have an SS sieve in line for the first few minutes just in case, though.

In addition to. The sabco false bottom has a habit of bumping up a big load of grain at the end. And I'm never watching to deal with it. This works great.

Well, the final verdict is positive. I had one bottle, and Nash had some as well, and I'll be using more Gambrinus ESB malt in the future. I think it's well worth a try for anyone looking to experiment with different base malts.
