2017 Advent - December 7 - Red Ryer APA

Post by sheppard107 » Fri Nov 24, 2017 8:00 pm

This came about as a way to use the pile of Red X and Rye malt that I picked up in a group buy a few years ago. And it's turned into one of my favorites. Originally based on Keith's Funktown APA, with various changes and modifications along the way.

Ingredients:
------------
Amt Name Type %/IBU

8.25 gal Water Water -
4 lbs Best Red X (28.0 SRM) Grain 32.6 %
3 lbs 9.0 oz Rye Malt (4.7 SRM) Grain 29.0 %
2 lbs 12.0 oz Pale Malt (2 Row) US Grain 22.4 %
1 lbs Caramel/Crystal Malt - 15L Grain 8.1 %
1 lbs Melanoiden (20.0 SRM) Grain 7.8 %
1.00 oz Cascade [6.90 %] - Boil 60. Hop 26.8 IBUs
0.50 tsp Irish Moss (Boil 10.0 mins) Fining -
1.00 oz Amarillo [9.20 %] - Boil 10 Hop 12.9 IBUs
1.00 oz Cascade [5.50 %] - Boil 10. Hop 7.7 IBUs
1.00 oz Amarillo [9.20 %] - Steep Hop 0.0 IBUs
1.00 oz Cascade [5.80 %] - Steep Hop 0.0 IBUs
1.5 pkg Safale American US-05 Yeast -
1.00 oz Amarillo [8.70 %] - Dry Hop Hop 0.0 IBUs
1.00 oz Cascade [5.80 %] - Dry Hop Hop 0.0 IBUs

Batch Size : 5.00 gal
Estimated OG: 1.058 SG
Estimated Color: 16.1 SRM
Estimated IBU: 47.5 IBUs
Mash Temp: 152F
ON TAP: Crazy Corvid English Pale Ale, Unlucky Sunday Rye Stout
BOTTLED: n/a
IN PROGRESS: Snowy Mountain Pale Ale

Fantastic beer. I was looking forward to this one.

For so much rye, I didn't really pick up on any of the typical spiciness.

The colour was gorgeous.

The aroma was great.

Definitely noticed the caramel.

As it warmed, right at end of a sip, I tasted what I can best describe as bergamot. T'was delightful.

I don't know anything about Red X. I wonder if that's where the bergamot is coming from.

Really nice hoppy beer. Long lasting head, tons of hops in both the flavour and aroma. Got a bit of rye character but only because I was looking for it. A tad bit too much crystal malt but still a fantastic beer. Thanks!

Really well done.

Pours really nice, nice persistent head. Very crisp up front following with a smooth texture and sweetness and then a touch hot at the end.

The bitterness is exactly where I like it these days.
I actually like the amount of caramel Malt in this however I can imagine it getting a little much with another bottle.

The rye for me is on the mouthfeel, there's a slight silkiness to rye that I like and it's here.

Flavor wise this is a great beer and balanced beer. Nothing is in my face, nothing stands out. The hops, malts pair with the mouthfeel and aroma to form a unity.

Great job and thanks for the beer.

Great beer, thanks! I don't think that's a lot of crystal malt and it's only 15. I don't enjoy beer with lots of crystal and I really liked this. I'm a fan of Red X as well, and I wouldn't say that's where any bergamot flavour is coming from.

Well balanced, nice character all around, easy drinking. I'd have another.

Turns out bergamot is citrusy (just found that out!), so maybe it's the Amarillo? I've never noticed it with Cascade.

Thanks for the feedback guys. Just a couple of comments on the comments. First, the rye malt is the last of a big batch I had on hand, so it's getting near the end of it's 'fresh' life. That might explained the muted rye flavor (and previous iterations did have a much more noticeable rye character). Second, the bergamot/citrus character. It might actually be as much from the Cascade as the Amarillo; they came from Kyle's Quebec hop group-buy back in the fall, and I've noticed something more of a citrus flavour in them than is usual for Cascade.

Really liked this one. As with Buccaneer, I got a bit of a "bergamot" flavour. I wonder if it's the interaction between the rye and hops. Either way, tasty beer. Thanks!

Nice APA. Rye spiciness was super subtle. I had to warm it up a bit to get some hop aromas from it, but once detected, they were pleasant. Bergamot for sure, nice rounded citrusy aroma. Good session beer recipe. I'd probably bump up the late hops just because I like them in my APAs. I had some gushing in the bottle after the first pour, but it didn't seem to show up as a problem in the beer, possibly some astringency but not much. Nice beer.

Great APA - it's a very easy drinking beer at the moment, maybe some more hop aroma will come through once it warms up a bit but I'm digging it as is - nicely carbonated as well

I liked this one too. The rye was just enough and any more hops you’re getting into session IPA territory. I’ll have to try some red x in something. Thanks.

Really enjoyed this! Full flavoured and complex beer but still very drinkable. Nice balance between malt and hops. A bit sweet but the hops and spice from rye makes it not cloying. If I had to critique anything it might be that I thought it was a tad overcarbed. I made an all Red X malt APA not that long ago, but I like the complexity of this quite a bit more. Well done!
