Pitched at 9C
Free rise to 12C and fermented two weeks
Raised to 16 for another week
Crashed and lagered for 6 weeks and kegged

I’m picking up some green apple in what’s left of the keg with this. I’m hoping its not present in the bottles. First time using wlp830 but it’s not known for acetylaldehyde.

Acetaldehyde was in every beer you've ever made. But I understand what you're saying. It doesn't produce as much as others.


This can also be formed from the oxidization of ethanol. Any chance she got a little oxidized on the transfer? It may not present itself immediately but then later in a keg it can. I'm just thinking you would have noticed it before if it was just a matter of the yeast not cleaning it up.

I'd be inclined to say this is oxidation, not acetaldehyde.

I having mine from the bottle now and it’s a million times better than what was left in the keg. The end of the keg was cloudy as hell.

This may be oxidized a bit but I dont get much if any green apple.

Looked amazing when I poured it - great colour, lovely foam and carbonation. Nothing particular about the aroma.

Sadly, there was something seriously wrong with it. :( Some wet cardboard, some acetaldehyde, and then some super intense, overpowering flavour that I don't know how to describe. Fruity in nature, I guess, but way over the top, like some sort of concentrated fruit extract. I don't think I've ever tasted anything like that. Infection, maybe?

I'm having this with tatamgouches Baltic porter later hahhaa. Gonna be a tough act to be paired with maybe.

I bought it for my work Christmas party and thought it was a bad idea to drink it around normal people so she's on the table tonight.

The beer looked amazing but I did get some wet cardboard green apple stuff going on. I could almost taste a green apple flavour or something potently fruity that I'm sure didn't belong. I'm not skilled in describing off flavors but something was there.. either way thanks for sharing! hopefully someone can nail what's going on in your beer

Sadly, this mirrors my experience. A shame as there seemed to be a great brew hiding in there. I was looking forward to comparing this one to the Dec 14 marzen too.

Beer poured and looked great. However, this was like drinking apple juice to me. Big cider/apple flavours, so much that you could have told me it was a cider and I would have believed you. I did not get the wet cardboard flavours though.

I didn't really get any cardboard flavour but there was something definitely off with this one. Like others, it seemed extremely fruity to me in a way that was off-putting. Kind of a candy apple flavour. Too bad, but these things do happen.

I did get the acetaldehyde in the aroma, but I didn't think it carried through to the flavour nearly as much. I didn't really notice any wet cardboard. I liked the malt flavours underneath, and despite the green apple I thought it was still a very enjoyable beer.

Myself and the wife both got the acetaldehyde aroma and flavour unfortunately. Any idea where something like this might come from? The recipe looks solid though, I might put it on the list. Thanks for sharing and hope you had an awesome Christmas!
