5.00 tsp Wasabi (at Kegging) Note: Best to take a fermented sample of beer pre-bottling and try dilutions to see what level of wasabi you prefer. The wasabi effect seems to mellow fast, I'm not sure 5 tsp per 10gal will be noticed in the final bottled brew.

68.0 C for 45 min
Ferment at 18C, let ramp up to 22C naturally over 5 days

I cracked this before reading the recipe details.

It poured nice and thick, with a lovely thick foam.

The aroma was... really odd. It smelled like something was off, but I couldn't figure out what it was. I'm guessing that's the wasabi. Whatever it is, it seems to have masked all other aromas, at least for me.

Mouthfeel and carbonation were great, but all I could taste was an acrid burnt flavour, rendering the beer pretty one-dimensional. I'm not a wasabi guy, so I don't know what impact that's having on what I'm perceiving.

I'd love to know what the wasabi was doing when the beer was newer.

Did you use authentic wasabi or the horseradish imitation? I got some of the spice in the back end which I enjoyed. I thought the base beer was maybe a little thin in body, but was otherwise a solid stout. Myself, I would've increased the wasabi. It was quite mellow overall, present but in the background.

This is really interesting. For me the wasabi level, aroma and flavour, was more than I'd like to have in my beer. I don't think there's a level I'd enjoy. But other than that, I really enjoyed the beer. Mine was super creamy, and just the appearance had me reaching for another sip. Thanks man.

I thought the wasabi in the aroma was harsh, like horseradish. I purchased what I thought was authentic wasabi (S&B) but I think it was horseradish based since it's not the same smooth, soft aroma / flavour that I was expecting. More research needed.

I did like the pepper mouthfeel from the wasabi which I kept restrained on purpose since it is a wide audience and spice beers can be polarizing. I think I'll try this again but not until I research the wasabi brands and aim for smoother aroma.

I cracked this open a few days early, to share with a few buddies along with a pot of hot chilli. The underlying stout seemed quite good. There was something of a metallic taste, and another vegetable taste at the end. Both of which I'd guess were due to the wasabi. Definitely a different brew. Thanks!

This beer was a wild idea and I'm glad I got to try it. When I first cracked it open the aroma was nice and it tasted pretty nice. Nice carbonation and body as well. As it warmed up the wasabi smell and taste became more pronounced and started taking away from the beer. It started taking on a vegetal finish along with a touch of spice. With all that said I did enjoy the beer!

I really like this beer. I also really like chipotle stouts/porters. Not something I want more than one of a couple times a year. I got the vegetative flavor that was a little odd. It wasn't a flavor i would contribute to wasabi. Nice mouthfeel, full, nice carb level, decent amount of body and a little roast to go with it. Didn't see the cocoa nibs in the recipe first but I picked up some on the flavor from memory.

I thought that this was a very well made stout with just a hint of wasabi. Didn't find it off-putting at all and if I hadn't read the description, I would never have guessed wasabi...

This.

Was curious to try it and it felt like a well made stout, got a bit of wasabi in the nose but not able to detect in the beer. Could be because it did not get a chance to warm up.

I thought this was a good beer. The wasabi (I'm assuming) gave an odd aroma, but in the flavour it mostly just tasted like a chocolatey stout. The wasabi gave it a little kick in the end, but in a good way, not like you get with some chili beers. I'm not a fan of those.

I don’t get any wasabi in the nose and I don’t really taste any but there is something that coats my tongue in the finish, maybe a tingle or a small amount of heat. I really like this, thanks.

Really good stout, i didn't get much of the wasabi, but their was a unique bitterness to it which was likely due to the wasabi. Would drink again (and again)

Yeah, I'm still playing catch up...

Got a weird smell off right out of the gate that made me unsure. So chocolate, coffee and soy sauce lol. But not over the top. Almost complimentary.

Great tasting base stout recipe and with the wasabi (I assume) pairs nice with the bittering hops.

Bottom line, I enjoyed this stout. I would drink this beer any day...in winter.

I liked this a ton. Drank it all without realizing it had wasabi in it. Wish I checked the recipe first to see if I could have detected it.

Just having this tonight.

One year later - not getting any of the off aromas on pour that other people reported. There may be the slightest hint (flavour) of wasabi at the end, but definitely subtle (if still present).
Overall - it's an awesome stout, great carbonation level. Thick tan head on pour, great mouthfeel and delicious coffee and chocolate notes.
Could definitely drink a couple of these !!!

I stashed away one of these last year and had it last night. Excellent beer, even more so than from last year. The age rounded out the flavours and still the slightest hint of the wasabi in the finish as there was a slight tingle on the tongue. Well done sir. :)

This reminds me that even if you're bottling your beer thinking it will be consumed right away, take the time to properly bottle (good sanitation and thoroughly purge with CO2 when bottling from keg) in case the beer is stored for longer than you anticipated.

Glad the beer held up ok.
