9.0 oz Carafa III (525.0 SRM) Grain 4 2.5 %
9.0 oz Chocolate Malt (508.0 SRM) Grain 5 2.5 %
9.0 oz Roasted Barley (609.0 SRM) Grain 6 2.5 %
9.0 oz Special B Malt (180.0 SRM) Grain 7 2.5 %
2 lbs 6.4 oz Extra Light Dry Extract (3.0 SRM) Dry Extract 8 10.8 %

I'm actually gonna brew this

Outstanding beer!

Nice vanilla and slight alcohol on the nose a very deep dark chocolate note perhaps

I'm using this beer exchange to help myself taste and describe tastes better but I'm not very good at it yet.

Beautiful flavors, nice chocolate/coffee from the Carafa, there's some roast in there from the chocolate.

Special B hey? Interesting. It's a strong Malt on its own I'm trying to detect it through the others. The beer is slightly fruity maybe that's it.


Either way, I think it's a bit above and beyond to hand out a year aged stout but this steps up the game.

I like the use of the dry English Ale yeast. I think some of the other common yeasts for this beer would have left it too sweet. There's just enough sweetness here to deliver the other flavors and balance the roast.

Poured really nice, black with a tan coloured head. A bit on the hot side, but there is nice rich chocolate and caramel aromas. A nice bitter chocolate, rich malty flavour with notes of biscuit, toast and graham crackers. Some boozy alcohol to it too. Rich full mouthfeel, nice carbonation for the style. Thanks a lot, really enjoyed this one!

I wish I could cap and save this, taking sips from it daily and making it last longer. It's the perfect December, dark, cold night beer. I get a lot of dried fig and dark cherry on the nose, along with sweet molasses. For the ABV, not too hot, and it's aged well with some mellow wine notes but no oxidation perceived. Full, robust flavour, slightly boozy but well supported by the rich malt. It has a full bodied, creamy texture that has a long sweet finish that's not cloying. Good balance of alcohol to sweetness and malt richness. I enjoyed this one a lot, thanks for sharing. It's a big beer to give away to strangers!

I have marked in my book that my post boil was 1.108 which missed my mark by 7 points. Hard to hit the gravity when it is gets high like that. I think it finished down around 1.020 as I have it marked as around 11.5%. My notes appear to be missing the FG.

This was a sipper for me. I've only had a few RIS and I haven't been huge on them I always find them too boozy. As it warmed up I enjoyed it more. Liked the bitterness and aroma a lot I get a lot of raisins. After reading the BJCP guidelines sounds like its pretty spot on. Thanks for sharing a long brew in the making!

Wow.. just saw your response. No wonder I'm feeling so good at 11.5%... considering it's strength it's remarkably smooth.

Love drinking a RIS on a Monday night.

This was a really nice beer, lots of fig and dark fruit, roast was balanced, big smooth body. Very well done. Thanks for sharing

Really nice vanilla aroma, but the alcohol seems to drown it out a bit. Flavor-wise it's a hit. Nice bitter chocolate and dark fruit, and not too roasty. I like ...

I shared this with another Brewnoser who didn’t get in on the Advent Calendar. We both really enjoyed it, deep complex flavours and a little boozy warmth. Thanks for sharing such a well made and well aged beer!

Great beer!
I think it was too much for my tastebuds on the first sip. But after that .... WOW. The best I can describe is like a rum / raisin / fig with underlying chocolate tones. With a warm alcohol after taste. Body was full and smooth.
The 11% is definitely kicking my butt!

Really enjoyed this beer while sitting by the fire, watching a cheesy holiday movie. As one does. It was warming and smooth. Lovely beer.

Playing catch up. This is a nice beer. I get vanilla and dried fruit that I assume are age-related. Nice and roasty but not harsh. LOTS of booze at the end, but as I’ve said many times before, I like that. Thanks for sharing.

Finally got to this one.

I get a lot of soy sauce on the nose. Some vanilla and a little bit of cocoa too. Some phenols as well.

Very savory flavour. Lovely smooth mouthfeel. Obviously very boozy.

I find the whole umami thing very strong, but not in a negative way. It does hide much of the other flavours for me, though.

I would love to marinade a really expensive steak with this.

Playing catchup and this is a great beer to unwind with after a busy weekend. Tasty licorice and toffee flavors with some welcome heat. Roast and coffee coming through as it warms up. Wonderfully enjoyed.
