12 December exchange beer. Bonne Année
For 20l
4kg pils malt
800g Rye
800g Vienna
30g Northern Brewer @60
3724 Wyeast Saison yeast
OG. 1.066
FG. 1.001
ABV 8.6
IBU 30
At high krausen I fed in 1lb of dark Candi syrup. I really should have put it in at the end of the boil but I forgot, so it was added later. Didn't get quite the colour or flavour contributions I was looking for but you can't win them all I guess.
After 10 of primary days I pitched Brett brux and let it sit for about three months before bottling. Enjoy!

I wasn't crazy about this one. I was surprised at how many of the ingredients I picked out, so that was cool. It all seemed pretty clean, although it's hard to tell because of the saison yeast and brett. For me, though, it was too busy. I also found the alcohol taste a bit too much.

I appreciate the complexity of the procedure and aging involved for this one, especially since I haven’t used brett myself. But to be honest I didn’t really enjoy it, the smell was off putting for me (again it may be a brett thing) and I found the taste over sweet. It’s entirely possible though that I’m just not familiar with the style. Certainly not throwing rocks as I’ll be living in a glass house come the 20th.

I'm not sure if the Brett brought something unfavorable to this for me or if it was just some fermentation byproducts that weren't cleaned up. I would really like to see what this beer could do with another 3 months on the Brett.
It seems as though there's a bit too much going on between the saison yeast and the Brett as well but when it both comes together it's doin a disservice to the procedure for sure.
I've never heard of someone aging on Brett after a saison yeast. Maybe it's common I don't know but I figure you would want some food for the brett left around? I really don't know
I still drank it and enjoyed it so there ya go!

This one has some nice Belgian saison aromas (peppery/ clove spiciness)and was pretty high alcohol in the flavour, not as much on the nose though, so not too "hot" or harsh. I think the Brett character was restrained, more was present the aroma than in the flavour, and I'd probably try to give it more time on the Brett to see if it would dry out some more. It had a bit of astringency in the finish, but not too harsh, just sort of like a robust red wine type of tannins. It's seems like a young saison - particularly for the high alcohol. Like what Buccaneer said, the flavours were all there, just not melded together but standing apart on their own. Age may allow this to develop into a more complex beer.

I liked the Brett character in this one quite a lot, but as others have mentioned, it may have benefited form more time with the Brett to dry it out, as I did find it a tad sweet.

Thanks for the feedback everyone. I agree the beer is still young, I was hoping a large pitch if Brett and warm temps would get the job done in three months, but it still hasn't gotten to where I'd like it. Thankfully this was a double batch and I still have 40+ bottles to sit on. As for the sweetness I think that's a combination of the fruity esters and the high ABV. It does come across as quite sweet for a 1.001 FG

Maybe more carbonation would help out with this perception (they say low bodied English ales benefit from low carb to help increase the mouthfeel, maybe you need the opposite). I also think given a bit more time the Brett and the saison flavours might combine better, or you just might end up with a lot of Brett. Good thing you have lots of bottles you will get to see this evolution!
