Governors IPA

Plan to brew my first all grain this weekend, with the help (direction) of my friend (and fellow Brewnoser/Aleander) Hogie from PEI;

Shooting for a slightly malty IPA (more of a balance malt/bitterness than my typical West Coast IPA's). Not sure on the hop schedule, not really all that familiar with the hop varieties.

Comments welcome (requested!)

Well it doesn't look too bad now that I can see it LOL

If it was me wanting a nice malt-bombish IPA I'd cut the IBUs to about 70, increase the ass out of the finish and dry hops and loose the dark crystal plus replace about 10% of the 2-row with Munich malt. Mash around 68c or so and/or a bit of carapils in there would be good too.

Okay, maybe it didn't look that good after all! :spilly: :spilly:

Seriously though, it'll make great beer but if you want to keep it similar to what you have there instead of taking my stunning advice I'd still say drop the dark crystal. Plums and raisin flavours have no place in hoppy beers imo. :cheers2:

Ha, well I don't want a 'malt-bomb' per say.. just a bit more than my 3-4 SRM IPA's with lots of hop aroma/flavour and NO malt flavour, just a step in that direction. Can't go with the Munich malt, don't have any.. I went to NG to buy the 120L and all that had was 80L, so I guess I followed your advice to a certain degree anyways.

Would you suggest to get color a bit darker that I just use 'more' lower color crystal instead of a bit of higher color crystal? I don't have any appreciation for how this affects flavour.. :?

I do have some carapils I can use.. so maybe I'll replace the 120L with say 200g of the 80L, keep the 60L and add a bit of carapils?

School me in the affect on the flavour of using dark or light crystal to achieve the same SRM... I need it. I'd really like to get a bit of malt flavour without going sweet! Is this possible (is malt flavour seperate from seperate in any combo?).

a lot of my ipa's use around 5-10% crystal and in the 60-80 IBU range they always turn out great.

i would agree with nash. i typically use less hops for bittering and more near the end of the boil.
typically 15-25% of the IBUs come from the bittering at 60 min and the rest of the IBUs come from the end (20 min - 0 min)

It's a bit tough to answer those questions but I'll try to make a bit of sense out of it.

Darker crystal malts have more intense and very different flavours - light crystal tastes like caramel, dark crystal like dried plums and raisins. Crystal malts are 100% unfermentable long chain sugars so in using them you will create sweetness so if you don't want a sweet beer don't use too much. Malt flavour is not the same as sweetness. Colour doesn't have to be dark for strong malt flavour either, darker colour generally means darker malt flavour and for me it's not what I want in an IPA. I want to taste the hops in all their glory but want malt balance. That's why I generally brew them to 300 or 400 IBUs :lol:

3 or 4 SRM is on the light side to get full malt flavours for me so I usually prefer them in the 5 - 8 range since that's where they end up being with the malt flavours I love. I hate dark IPAs and I hate blond IPAs :lol: If I wanted darker colour I'd add roasted barley or black malt, too much crystal covers up hops. Use Munich, Vienna, Melanoidin and light crystal, or for more flavour and effect use some special roast, biscuit or kiln amber malts.

I'd dump the dark crystal but that's just my preference, and cut the IBUs to 60 or 70 if you don't want it to be too bitter.

Fun brew day on Saturday. Due to cold equipment/grains, we missed our mash temp (settled for 64C) but still hit 75% efficiency. Can you post the final recipe Tim? I think there are enough speciality grains there so the beer won't end up too dry. The hops will mask any imperfections anyway! :cheers2:
