Cloudy with a Chance of Hoppiness
BJCP Style Guide 21B - Specialty IPA

Batch size 23 L
Boil time 60 min
Equipment: Robobrew - Version III
OG: 1.065
Est. FG: 1.014
Est. ABV: 6.8 %

Grain

3.90 kg - Pale Malt (2 - Row) - 65%
0.3 kg - Vienna Malt - 5%
0.34 kg - Acidulated malt - 5%
1.40 kg - Flaked Wheat - 25 %
Rice hulls - 3 - 4 handfuls

Water
Distilled water
Water additions (mash):
CaS04 - 7.9 g
CaCl - 3.4 g
MgS04 - 4 g
Water additions (Sparge)
CaS04 - 3.5 g
CaCl - 1.5 g
MgS04 - 1.8 g

Heat 21 L of water to strike temp of 162 F and then add grains to maintain a mash temp of 152 F for 75 mins. Mash out to 168 F over 10 mins.
Recirculate gently throughout mash
Sprage with 9.5 L of water heated to ~ 160F
Collect 25 L water

Bring to Boil and Address:

28 g Chinook (11.9% aa) - boil for 40 mins
NO Whirlflock added
10 mins - 2.5 g yeast nutrient
45 g Citra (12% aa) - boil for 5 mins
45 g El dorado (14.3% aa) - boil for 5 mins
60 g of bitter orange peel - boil for 5 mins
120 g grapefruit peel (fresh) - boil for 5 mins
0.5 kg lactose - add at 0 mins
60 g Citra (12% aa) and El dorado (14.3% aa) and steep for 20 mins @ 180 F

Cool to pitching temp

Oxygenate wort and pitch Safale US05 @ 18 - 20 C for 14 days.
Used London III last time - so that's an option too.

Dry hop additions:
Add
15 g of Citra (12% aa) and El Dorado (14.3%aa) and 20 g of Idaho 7 (13% aa) on day 2 of fermentation
15 g of Citra (12% aa) and El Dorado (14.3%aa) and 20 g of Idaho 7 (13% aa) on day 4 of fermentation
15 g of Citra (12% aa) and El Dorado (14.3%aa) and 20 g of Idaho 7 (13% aa) on day 6 of fermentation
Added 500 g toasted - flaked coconut at the last 4 days of fermentation, (day 10 - 14)

Will keg and carbonate to 10 psi (2.4 volumes) and fill from keg.

Hope this one comes out as good as my first batch and everybody enjoys!

I usually have the name first and try to figure out a recipe to match. I have That's No Moon for a Belgian Wit but I don't like the style so will likely never brew it.

I added the chinook at 40 mins to this one. Last one didn’t have anything until 5 mins. And was a touch on the sweet side.
Also US 05 (because that’s what I had), this time, instead of London III.

Definitely recommend letting this one warm up a little from fridge cold. There's a ton going on here and I'm not entirely sure it works as a milkshake IPA, but I did enjoy drinking it overall. I think people's feelings on it will be heavily tied to the coconut. The color seems somewhat dark considering the grist and a 60 minute boil, but that's just a cosmetic thing. The coconut works with the hop flavors, but there's a juice-like character (acidity?), possibly from all that citrus rind, that I think might have worked better against vanilla than coconut (if only vanilla weren't so god damn expensive). I'm curious how big the difference is in appearance and mouthfeel between this batch and the previous batch with the London III yeast? Thanks for sharing!

If I didn't read the name of the beer I wouldn't think milkshake IPA either but I get what you were going for! I thought it was pretty tasty. I'm also curious what the london ale yeast would do for it. I was hoping to get that citrus finish but I think the bitterness from the peels works against it. Didn't get a ton of coconut either so that was a plus!

Color really threw me off based on the posted recipe. Lots of coconut and hops, was enjoyable to drink.

Not really what you were shooting for I’d guess. Hops so subdued they almost don’t show. Nice coconut and graham cracker thing. Toasted coconut. Murky uncertain drink. Image

Lovely beer, makes for a nice chill on the couch after hockey. Lots going on in it, I'm digging all the coconut used in this year's exchange. Thanks for sharing!

I am not sure if my taster is broken, I was not able to pick out the coconut in this. Usually not a fan of coconut anyway so I am okay with it! I was getting lots of hops on the nose, and in the finish. Found it to be very tropical, was getting pineapple and grapefruit. Another very enjoyable beer. Thanks!

I enjoyed it. Little bit of a mess goin on for me, hops indistinguishable. I don’t like coconut but you guys are selling me on it slowly with this exchange hahaha.

Agreed with the tornado of flavors, definitely tropical and I certainly enjoyed it. In my head when tasting it I was expecting a slight harshness from the hops based on the first impression but the lactose presumingly mellowed it out which is cool.

A very interesting beer. Sweet, tropical flavours with coconut to begin with and the juicy mango in the hops coming forward towards the end, but not hanging around long. The mouthfeel was creamy, like pina colada despite the strong carbonation. I didn't pick up the oxidation. The finish had a little zing, maybe from the citrus peel.
