Pilsner

Was wonderin on any ideas on my Pilsner tomorrow. Grains I have and the hops I have are: Lots of sazz, 1 oz of liberty, 90g pride of ringwood and 50g nelson sauvin.

PoR and NS. There's some rare stuff. But I'm not seeing your grains. And more importantly, your yeast....

100% Pils malt
Saaz to about 45 IBU
but like X said, what yeast do you have on hand?

That's just a WAG - I can't find my copy of BCS yet.

Sorry forgot, s-189 dry lager yeast. I am going to ferment this at about 60f as lower is not really feasable. Have 5kg pils malt but may only use 4.5 and a bit of corn sugar or not lol.

Well, that sounds good, but I think that fermentation temp is pretty high.

Can you pull of a decent pilsner at higher fermentation temps using California lager yeast? Has anyone tried this? I love pilsners, but as a relative newcomer to home brewing, the prospect of lagering completely freaks me out.

I'm not sure that yeast will give you really clean pilsner, but it would still be a great beer. Lager yeasts are no big deal. Just need a proper pitch.

Apparently Wyeast Bohemian Lager (2124) will give you a pretty clean pilsner/lager in the low to mid 60's. There was some information about it in the latest episode of BrewingTV.

There's nothing scary - just find yourself a place with a constant, cool temp, put your beer in there and forget about it for about 3 months.

Thanks, everyone. I've seen pilsner recipes with specific lagering schedules, like 'X days at temp A, Y days at temp B.' The message from this thread seems to be that it doesn't need to be that complicated, or necessarily that low temp. I think that for my next attempt I'll try patience and a spare fridge :D
