2018 Advent. December 19 Cranberry Ale
Cranberry Ale
23L
3.5 Kg Pale. 64%
1.5 Kg Vienna. 27%
0.35 Kg Light Munich. 6%
0.15 Kg Carapils. 3%
5g El Dorado 14.4% AA 60 min
10g Willamette 4.8%AA 20min
15g Kohatu 7.2%AA 20min
20g El Dorado 20min
5g Willamette 5min
13g Kohatu 5min
10g El Dorado 5 min
2kg cranberries 10min
3tsp pectic enzyme in +70ml boiled/cooled water added to fermenter.
Wyeast London ESB (1968)
OG 1.059
FG 1.011
ABV 6.3%
IBU 37
Mash at 68c 60min
Pitch yeast at 16c
Raise temp to 21c over 4 days then raise to 23c over 2 days and hold.
Ferment for 10 days. At this point the co2 activity was pretty much inactive. Gravity was 1.016.
To try to clear the pectin haze I added another 3tsp of pectic enzyme and roused the yeast. Fermentation took off again and let it go for another 2.5 weeks when the FG stabilized at 1.011.
Total time in fermenter was 26 days
Cold crashed for 4 days.
Keg/force carb/beer gunned.
Only a very subtle hint of cranberry taste and tartness.
I fermented the WY1968 on the high side to gain some of its’ reported fruity esters which I believe happened.
Both additions of pectic enzymes were made primarily to clear the heavy haze created by the pectin released from boiling the cranberries, and while I expected the enzyme to have the secondary effect of lowering the FG, I was surprised it finished way down at 1.011.

Well the enzyme worked! This beer is crystal clear. There is a definite fruity aroma from the blend of yeast hops and cranberry. Slight tartness from the touch of cranberry flavour. Goes down easy and would be great on a hot summer day

Nice beer, thanks. Initially I got a bit of a metallic character, but I either got used to it or it went away as the beer warmed up. I'm not sure what could have caused it, but it tasted like some water I've tasted before with a metallic note to it. The head on this beer is beautiful. Lots of lacing, about a half an inch on the sides persisted for the entire glass. I find the hops, cranberry and yeast character are pleasant they seem a bit muddled together. Maybe fermenting with a more neutral yeast could help that out. But enough nit picking this beer was fun to drink. Thanks!

Super interesting to taste Cranberry in a pale non-sour beer. Right from the aroma there’s a mix of sweeter malt and fruit. The acidity of the cranberry provides a nice balance and keeps it from being at all cloying. Finishes with a decent bitterness as well. Probably not something I'd make myself, so it's nice to try it; thanks!

I was excited to try this and wasn’t disappointed! Nice carb and head when I poured. I’m a big fan of fruit beer in the summer time so the cranberry twist for the season was kinda neat. The cranberry wasn’t over powering, but gave just a nice tart flavour that I thought worked really well with the hops and bitterness.
I’m going to take a stab at making this one for sure! Thanks!

Had this last night at a house party, made the mistake of pouring it into two solo cups and it super foamed, resulting in most of the carbonation being lost. Despite this I still enjoyed every drop - somebody else was right that the cranberry adds a nice little tartness to the base ale. Thanks for sharing!

Enjoyed this on Sunday while brewing a beer for the Boxing Rock Black Box Challenge competition. The cranberry was very present, but nicely balanced with the beer. Great job!
