2018 Advent - December 21st

Post by darciandjenn » Sat Dec 01, 2018 3:50 pm

It's the Holiday Amarillo Hopfenweisse...

So this is a recipe that we've brewed up probably a half dozen times and it's always been great. However, I'm really worried about this batch - the half that we kegged might actually end up down the drain... It seems like a case of extreme oxidization (colour is off, hops are muted, tastes stale). I haven't opened any of the bottles yet, but my fingers are crossed that they have fared better. I'm sorry if they haven't!

Ok, we popped a bottle tonight. It tastes better than it looks. We’re wondering if there was a mixup with the malts in the recipe... anyway, it’s not as we intended and please let us know what you think went wrong.

Mine was quite dark almost had a purple kind of color to it but as you mentioned it tasted better than it looked. Maybe a touch bitter for my preference but I can see this being a great summer beer. Did you figure out if there was a malt mix up or maybe how you got oxidation?

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Swamp brew! Definitely tasted better than it looked and I think theres a good beer there behind the mixup. Kind of had a belgian ipa taste going on. Would be curious to know where the mixup was. Thanks for the beer.

I concur - looked weird, tasted ok. Definitely a great beer hiding in there.

Slightly banana (and bubblegum?) yeast character off the top and seemed a little bit hot as well. Very nice thick white head and pretty decent retention. Bitterness is solid, super dry finish. Don’t get much in the way of wheat character from it at all but I did get a pretty decent citrusy hop presence. After reading the comments I also drank it mostly in a very dim room so any visual appeal issues were mitigated ;) Thanks for the share!

Mine did not have much in the way of flavour, and very murky. I was picking up fusel alcohol in the smell which I have had happen to me before when a batch fermented too high in temp. I was not able to pick it up in the taste however.

I'm super congested so my taste/smell is off - but from what I can taste it is bang on with what I was hoping for. Appearance-wise somebody else nailed it as a swamp beer haha. I enjoyed it very much, thanks for sharing!
