2018 Advent - December 25 Brut Force IPA
I was supposed to post this up weeks ago. Better late than ever.
This beer was a collaboration between 1029 Brewing's Brian Harvey and Brathair Brewing's Justin Clarke and Eric Gautier.
The idea for this beer was "mimosa" - orange juice and champagne. I think it turned out great! I would brew this again with some minor modifications.
The recipe:
Brut IPA
Specialty IPA (21 B)
11 lbs 8.6 oz Pilsner (2 Row) Ger (2.0 SRM) Grain 4 95.0 %
9.7 oz Carafoam (2.0 SRM) Grain 5 5.0 %
1.00 Items Whirlfloc Tablet (Boil 15.0 mins) Fining 6 -
1.00 oz Citra [13.10 %] - Boil 15.0 min Hop 7 19.4 IBUs
4.00 oz Orange Peel, Sweet (Boil 5.0 mins) Spice 8 -
2.00 oz Citra [13.10 %] - Steep/Whirlpool 0.0 min Hop 9 0.0 IBUs
2.00 oz Mandarina Bavaria [6.00 %] - Steep/Whirlpool 0.0 min Hop 10 0.0 IBUs
2.00 oz Mosaic (HBC 369) [10.70 %] - Steep/Whirlpool 0.0 min Hop 11 0.0 IBUs
1.0 pkg SafAle HA-18 (DCL/Fermentis #HA-18) Yeast 12 -

Fairly strong citrus hop character on the nose. Bitterness is kinda intense. Decent malt presence and hop character on the palate leading to an almost soapy finish. I think some of that is the dankness of Mosaic clashing a little with the rest of the beer, but I'm starting to think there's some effects of the enzyme used for this style that needs to be mitigated.
Anyways, while I didn't love it, it gave me a bunch to think about, which is always valuable. Thanks for the share!
