December 2019 Exchange - Dec 13 - Massively Mosaic APA

Post by sheppard107 » Sat Nov 23, 2019 8:54 pm

Nothing fancy, just a basic APA loaded with Mosaic hops. Just a heads up that there were multiple small disasters along the way when brewing this sucker. Blew off the air lock a few times, pretty sure I forgot some of the grains, etc. That's what I get or choosing Friday the 13th for my day. Hopefully it still turned out OK.

Massively Mosaic APA

6 lbs 8.0 oz Pale Malt (2 Row)
2 lbs Munich Malt - Light
8.0 oz Caramel/Crystal Malt - 15L
8.0 oz Caramel/Crystal Malt - 40L

1.00 oz Cascade 10min
1.00 oz Mosaic 10min
3.00 oz Mosaic Steep/Whirlpool
1.00 oz Cascade Steep/Whirlpool
1.0 pkg Safale American US-05
4.00 oz Cascade Dry Hop 5 Days
4.00 oz Mosaic Dry Hop 5 Days
ON TAP: Crazy Corvid English Pale Ale, Unlucky Sunday Rye Stout
BOTTLED: n/a

This beer turned out amazing. I'm sure I could sit here and find something wrong with it, but it's so good I don't want to.

Great carbonation, nice and clear, amazing hop aroma and flavours.

Fantastic job! Thank you so much!

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

This is a textbook example of why dry hopping is worth it. Appropriately named - a massive, fantastic aroma, and the flavour of the beer is a great showcase for the hop as well. A friend is giving me a bunch of Citra - I might have to steal this recipe to make a massively Citra APA...

I drank this one a little too fast it was so good - wish I had a dozen more.Image

Absolutely excellent beer. Just enough malt and a shit ton of hops. Mosaic blueberry character even creeps in a little. Thanks for the share!!

I surrendered this to my wife and she drank the whole thing! The sample I got went down nicely enough :)

That was a lot of hops! I too got that blueberry flavour from the mosaic, which I've read about but never tasted. I found the bitterness a bit low, but maybe that's because it otherwise tasted like an IPA to me rather than an APA. It was great though, I could've drank a lot more of it!

Damn good beer, I had my nose in the glass for most of this, man it smells good.

I was tasting something and the others pointed it out - so crazy that hops can give off a blueberry flavour!

I do second the IPA vs APA comment - it seemed bang on for a west coast IPA in terms of bitterness.

Thanks for sharing!
