2.23 kg Carabrown (55.0 SRM) 15.0 %
0.74 kg Caraaroma (130.0 SRM) 5.0 %
0.74 kg Viking Cookie Malt (30.5 SRM) 5.0 %
0.60 kg Special B Malt (180.0 SRM) 4.0 %
0.30 kg Chocolate Malt (350.0 SRM) 2.0 %

2.00 oz Magnum [12.20 %] - Boil 60.0 min 33.7 IBUs

2L starter Escarpment ISAR German Lager Yeast

Mash @ 150F

Held at 200F for 90 minutes
120 minute boil

Ferment at 12-15C two weeks
Condition at 5C for 3 weeks

I've been craving a nice doppelbock for a while and this is really hitting the spot. Not boozy. So malty, complex, chewy, delicious. I'm getting some fruity notes, not sure if it is from the yeast or some secondary characteristic of the specialty malts but it's low adds to the complexity. My only issue is despite how big (volume) this beer is, I want more!

Why did you hold the wort at 200F for 90 minutes and then boil for 120 minutes?
How did the viking malt work for you?

Based on the size and strength and the fact that my brother is also in this exchange we split one tonight and we’ll have the other some other time.

This beer rocks, it a got a big warm raisin and dark sugar thing going on. I think in a competition it might do better as a Baltic porter than a doppelbock, but that’s not a strike against it in my book.

Well sweet Baby J... wasn't this beer just the cat's ass?!

Beautiful blackish-red hue, good head retention, and bursting at the seams with toasted & roasted maltiness, all in perfect balance.

It had been a while since I had a doppelbock... and this one definitively hit the spot with a sledgehammer. As stated above, despite the bottle size, I truly wanted a second.

This was a very tasty beer, though I agree with another comment that it would do better as a porter than a dopplebock, as I found it a bit too roasty for that category. All the same, a delicious beer and we appreciated the big bottle!

I drank this without looking it up first. I'm astounded to discover it's a doppelbock. I was 100% sure it was some coffee stout/porter.

Regardless, it was fantastic.

Holy crap this was beautiful. Insanely smooth, a little boozy (in a good way), solid malt presence (almost on the porter side but that's fine with me!), and also crazy soft mouth feel.

The exchange is really off to a great start this year, wow!

I enjoyed this quite a bit. Definitely on the drier, roastier/toastier side than the sweet side, but that’s to my preference. Loved the dark fruit and dark sugar notes.

Glad to hear everyone enjoyed. To be honest, I wasn’t sure what to call it and as a couple mentioned, I would also agree that it is not a true doppelbock. I started thinking about Schwartzbier and migrated towards a big malty German lager.

To Adam’s question, I did the extended hot stand and long boil to bring out extra melanoidins from kettle caramelization.

And secondly, I enjoy Viking malt and have not had any issues. I typically do extended mashes, (more so for life balance), and batch sparge and get around 68-70% efficiency amd attenuation is as expected.

This was a tasty big ol' beer. While I do think you missed the mark a little on doppelback. where you landed is a fine place. A place of complex toasted malt, dark fruits, a hint of roast and brown sugar. A place near the land of the baltic porter.

Agree with others on style (not so much a DB - more like a Baltic porter), but damned delicious all the same. Also agree that it is not really boozy at all - very smooth for the abv. Dark as the night itself, and hitting the spot.

And the very generous bomber is commendable as well - sharing it with the missus.Image

I concur about the smoothness. The alcohol is well hidden. If I hadn't shared, I'd have been asleep without knowing why. :)
