10.00 g Simcoe [12.50 %] - Boil 20.0 min
14.00 g Simcoe [12.50 %] - Steep/Whirlpool 300.0 min, 194.4 F

Yellow Dry
Yeast:
Safale American (DCL/Fermentis #US-05) - 11.5g
Other/spice:
1.00 kg Blood Orange (Secondary 7.0 days)
1.80 L Cranberry Concentrate (Terra Beata) (Secondary 7.0 days) (~1500 cranberries!!! lol)
Other Comments:
This was a No-Chill batch hence the extended whirlpool; the hops are basically thrown in the no-chill cube and the wort is racked on so this roughly replaces the 10-20min hop addition

Had this last night. One of the rare times I’ve drank a beer blind and guessed mostly right: wheat beer with cranberries. The cranberry is very evident and comes through nicely with the tartness nicely balancing the wheat character.
I did sense something like diacetyl in this, but I don’t know that’s what it was. I do know I’ve sensed it in other fruited beers and have been told it can happen with fruit, especially blackberries. Meanwhile, I’ve never heard of diacetyl with us-05 (although I’m sure it’s possible). Regardless, it wasn’t overpowering or anything and the tartness and fruit kept the beer refreshing and I quite enjoyed it. Thanks!

Very tasty, refreahing, tart, and such a pretty colour. My wife ended up stealing this one from me, sadly... but I am lucky to have only had to sacrifice one of my decembeers to her. (Though my dad essentially stole one too around xmas time).
