Sampling a bottle and the beer still seems way under-carbed for a Belgian. Apologies for another carbonation issue (ran into the same thing last year).

I don't recall ever having tried the original "green cap", but this was phenomenal! i always try to guess the style before i look-up the recipe and had in mind a Table beer sort of brew with a champagne-aged profile. While i not all that naive to think that any of the Advent club has champagne barrels just lying around, this is still how it came to me while happily sipping at this. am surprised now at how simple the grain bill was.

Don't sweat it Cam, mine was undercarbed but I still enjoyed it. Simple but tasty beer. What temp did you ferment it at ?

Thanks, I think pitched around 65F then let it free rise into the low 70s

Undercarbed though it may have been, this was an enjoyable beer.

Low carbonation, which I like. Nice, clean unusual Belgian. Little-to-no aftertaste. Easy drinkin' beer.

Really Enjoyed it, I feel like the carbonation would have really brought this up a level with hop aroma.

Mine was only slightly undercarbed. Very delicious... haven't had the beer that inspired this one, but your homage would surely make them proud. Would happily crush a few of these.
