Hibiscus Witbier

42L batch

Malt:
4kg Wheat
2kg Pale
2kg pilsner
1kg flaked oats

Mash at 150 F

Hops:
2oz EKG (45 min boil) - 16 IBU
2oz EKG (10 min boil) - 6 IBU

Others added at 5 min from end of boil
50g crushed coriander seeds
30g fresh navel orange zest

Yeast:
Escarpment Fruity Wit

Hibiscus:
4 tea bags of hibiscus white tea steeped at around 180F left overnight
pulled tea bags and heated up tea to just boiling
cooled and added to one keg
Kegged: El Dorado IPA, Rocketfuel 2.0, Wet Hopped Pale, Ryrish Red, Marzen, BN Exchange Dunkel, BN Exchange NEIPA, Lies Lies Lies - Citra <0.5% ale
Fermenting: NZ Pilsner with Enigma, Strawberry brett cider

I enjoyed this. Hibiscus character is very nice and complements the yeast notes well. I would have liked a little more carb in a wit, but it was super tasty and I'd happily drink another.

I got some really weird and complex aromas from this that I think came from the tea, but the hibiscus comes through really strongly in the flavour and is complemented by the coriander. really made the flavours the main show and I enjoyed it a lot.

This was super interesting. Coriander was very present, but not overwhelmingly so and nicely fit in with everything else.. though it was the most coriandery beer I ever had. The yeast did a great job of making it fruity. I can taste the hibiscus for sure, but couldn't find the orange. A flavourful journey all told. Thanks for sharing!Image

Lovely beer! Did not know what to expect but wanted more after I finished. Excellent balance between floral & fruit. Well done.
