Belgian Strong Ale

Hoping to brew something this week to use a t58 yeast cake. I was doing some searching on the interwebs and found this recipe that seemed intriguing. I'm thinking something along the lines of Trois Pistoles - moderately dark, strong.

Batch Size: 5.50 gal
Boil Size: 8.04 gal
Estimated OG: 1.081 SG
Estimated Color: 18.4 SRM
Estimated IBU: 22.8 IBU
Brewhouse Efficiency: 75.00 %
Boil Time: 90 Minutes

anyone have thoughts on improvements to make?
edit note: i would likely just do a sacc rest as i am lazy and have never done a protein rest before.

going to change the vienna to munich because then it'll be closer to jamil's recipe

They have it at NG, but usually only in 2lb bags.

their ingredient chart only lists Briess Special Roast, which is apparently more like biscuit. Somewhere suggested using crystal 120 in a pinch..

Some of us bought a special B substitute, munich 120 maybe, a while back, maybe somebody here has some to spare. I have some in NG, but it will be 8 days....

Get the darkest crystal you can find :cheers2:
