Triple Threat Wheat V1.2 (lime and coconut)

Up next, lime/coconut, augmented with lemongrass and loomi. I used the zest of 2 limes, the juice of one, one can of coconut water (unsweetened, and pulp strained), a hunk of lemongrass, and a half teaspoon of ground loomi.

Man, these two threads are making me want to skip brewing a Pale Ale and brew a huge batch of wheat beer…

Sounds awesome Mr.X!!! is that all going into the boil, or are you going to cook it and add it later ? I'd like to try it if possible, sounds good!!

No cooking, it's all gone in the keg. That Coconut water is sugar free, so it's not for priming.

Well, I think it still has sugar (maybe 12 grams or so), it's just none extra added. The issue is the metasodium bisulphate added. I wasn't sure it would be dilute enough not to kill the yeast in the keg, so i went with no sugar added in a fully charged keg. Yesterday at Pete's, I came across coconut water with no additives or sugar whatsoever, i would have used that instead, as it was in a bigger can.

Sounds like a great recipe! I made a honey wheat beer recently that turned out well. Very subtle honey profile, which I was going for. What do you think about a honey lime beer? Or a honey lemon-lime beer? Or honey vanilla-lime beer? Honey Vanilla-lime is a bit of a stretch but again the honey profile is barely noticeable and the other two flavour profiles should come through. The zest two limes in the secondary is a good place to start you think? 20 questions I know haha. Thanks!

I'm not so big on honey beers. The flavour vaporizes. Maybe honey malt would fix that. As far as how much lime to use, I'll have a better feel next week when I try that beer

I used honey malt instead of real honey. It works much better. I used 8oz I think. Any more than 12oz causes a very sweet beer which is not desirable. I'm going to make it again in about 2 weeks. Thinking honey lime for now. It may change though.
