Basic Saison Recipe?

Basic Saison Recipe?
I want to use this WLP568 "Belgian Style Saison Ale Yeast Blend" but haven't brewed a Saison before..any suggestions? I'm looking for something easy, and that doesn't contain any hard to obtain malts or hops...
Some of the "possibly useful" malts I have on hand are pilsen, wheat, vienna, special aromatic, a variety of crystals malts, honey malt, malted rye..As for hops, I've got citra, amarillo, centennial, saaz, warrior, chinook, norther brewer, CTZ..I don't mind picking something up if Noble Grape carries it, but otherwise I'd like to stick with what I've got.

Ditch the rye and use wheat if you like for more conventional. And that one is overhopped a bit. Sharpen the water a bit too. Look in beersmith for some belgian profiles.

When do you add the honey? Would you use the same amount of malted rye as compared to flaked rye? Would an EKG/Saaz combo of hops be suitable?

The honey didn't do much, use regular sugar instead. Not sure on the malted/flaked...I'd guess the same. EKG/Saaz would be fine.

Here's one I did with malted Rye a little while back:

Turned out excellent, planning to brew it again before long because it was such a hit. You could sub out the Nelson Sauvin for pretty much any hops you'd like I think. EKG/Saaz would definitely work.

I think I am going to go with the "Raison D'Saison" from Brewing Classic Styles. I've got everything on hand other than the hallertau hops..Would Saaz or NB be a reasonable substitute in this beer?

Those hops will be fine.

Jimmy, maybe I missed it but what is your hop schedule?
On Tap "in bottles": winter beer (spiced beer, nutmeg, cinnamon, star anise, ginger, cloves)
In Secondary:

Nah, I just left them out of the recipe until I decide what I'm going to use. I will follow the schedule from BCS though.
