Hey all,

I am interested in brewing a Saison, and I have looked at Jeff and X's recipes on the forum. Where does one get the yeast strains required for these?

I've been using 3711. It's an order item from NG.

I used White Labs 550 from beergrains.com for mine, but after I get my money's worth out of it, I'm definitely going back to 3711. GIves much more of the dry, peppery character that Saisons should have.

Thanks Jeff! I looked at ordering WL550, I am glad you said you preferred the 3711. Makes my decision easier!

Consider 3724 as well, the Saison Dupont strain. Excellent yeast character from that one in my experience.

Absolutely. Can be a bit stubborn though, sometimes takes quite a few weeks to finish out. Really depends on how quickly you'd like to be drinking the beer. The 3711 and WL550 are pretty quick to finish up—I think I kegged my last Saison about 2 or 2.5 weeks after brew day and was drinking it within a couple days of that.

Agreed, it can take a bit longer to finish out for sure.
