Oktoberfest - Extract w/ specialty grains.

OG: 1.055 - 1.065
FG: 1.010 - 1.016
IBU's: ~56

7lbs Pale LME
6 oz Caramunuch
6 oz Crystal 80
6 oz Crystal 120
1/2lb Munich

2oz Fuggles @ 45min
1oz Fuggles @ 30min
1oz Fuggles @ 15min

US-05

All-grain - you could use 7lbs of 2 row lager malt
All-extract - 6lbs LME, 2lbs Amber Extract

Multi-rest Mash
20 min @ 104F
30 min @ 140F
30min @ 158F

Boil for 60 min

* A little more IBU's than I wanted for the style, but Fuggles were easily obtained. Liberty are a bit harder to come across!

It's not clear whether you're planning on steeping the Munich, but that grain is supposed be mashed unless you want unconverted starch in your beer. If you were gonna do at a mini mash with it, shoot for at least a 1:1 ratio with the other grains and 1-2 qts water per pound of grain in order to have enough diastatic power for conversion.

Bottle this a couple of weeks ago, had a bottle last night. A little maltier than I was going for, but otherwise a nice beer.

Malty as in sweet, or as in toasty/grainy? If its sweet I would cut back on the crystal next time and go for a darker munich.

I made it for Hoptoberfest, before checking my calender. I had a wedding to attend... Next year!

Malty as in sweet. It is coming around as it carbonates. I will definitely try cutting back on the crystal next time!
