Aunt Dunkel

Brewing up a Munich Dunkel on Wednesday or Thursday.

21.75 lb Munich Malt - 20L (20.0 SRM) Grain 95.60 %
1.00 lb Carafa II (412.0 SRM) Grain 4.40 %
1.00 oz Warrior [12.00 %] (60 min) Hops 18.1 IBU
1.00 oz Saaz [4.00 %] (20 min) Hops 3.6 IBU

Using the Rashenmaher yeast from the schwarzbier. It turned out really nice in that beer. Might cut the Carafa II down to 3% too.

It was one of the VSS strains from wYeast.

lol, I just finished reading Radical Brewing's take on German decoctions. While there will be a decoction, it will not be a triple decoction six hour mash. I may be crazy, but there are limits... :lol:

It was a good brew day. Did a decoction of about 2.5 gallons, and boiled it for maybe 30 minutes. I have a very good feeling about this beer. Did the Narziss fermentation method again - pitch really cold and let warm to 50f for the full fermentation. May try to squeeze in one or two more lagers before the temperature gets too warm. Maybe a Dortmunder/CAP/Helles/Vienna Lager....

I think this beer turned out really well. Sipping on one now, very deep in color, crystal clear (OM f'n G!!!), and generally tasty.

Slight revision. I am really liking this beer. I already know I'll be sad when it's gone, and I just kegged it today, lol. Hopefully, I'll have a growler kegged up nice for the next BN's meeting.

I found this old thread while researching a dunkel I'm planning. I just ordered Wyeast 2352-PC Munich Lager II (a seasonal) from NG.

My malt bill will be Best Maltz dark munich (I think around 12L), some melanoiden (BUT I might do a decoction), and some caramunich plus a handful of left over special B.

This brew looks awesome BTW.

I thought about putting some special B malt leftover from a dubbel in my last dunkel, but the dubbel never happened, so neither did the special B malt. Also, whoo! Decoctions!
