S'Mores Graham Cracker Imperial Stout
This is what I'll be brewing probably sometime next week. It's certainly different, but maybe that's why I wanna brew it.
I plan on adding some roasted marshmellows to the primary as well.

2oz of vanilla bean is a lot. The cinnamon is way too much.

LOL. Sorry made a couple of mistakes in Beersmith. It should be 2 vanilla beans, not two ounces, and the cinnamon should be 2 tsp not two ounces.

Got it brewed with an OG of 1.082. Should be interesting to see how it turns out.
Almost 16.5 pounds of grain
One pound of crushed graham crackers.
Grain and graham crackers added to the MLT.
Toasted some marshmallows in the oven and chucked them into the primary.

^ Btw, I did end up going with 8oz of honey malt instead of liquid honey like you mentioned initially.

Ok, so here's a pic of how it turned out. I'm really enjoying it! The taste of the graham crackers surprisingly came through, albeit quite subtle. I don't taste anything from the marshmallows though. If I were to change one thing, I'd decerease the amount of powered cocoa slightly......or better yet use nibs. Anyways, it turned out to be a very nice Imperial Stout and ABV ended up at 8.0%.

I'm wondering if just plain vanilla would do the trick, or maybe that fluff goo would get the flavour in better. Did you eat the marshmallows?:)

Hmmmm, that would be interesting to use Fluff next time. The flavour just might get in a little better. I did use two Vanilla beans so the flavours from that might of overpowered the marshmallows. And no, I didn't eat the marshmallows. Wish I could take credit, but saw it done at Base Camp Brewing in Portland, OR. Their S’more Stout is more coffeeish, and lacking in chocolatey flavor.
