Bouncing Baby Pale Ale

Hoping to get this one brewed before baby #2 arrives in the next few weeks:

For an 11 gallon batch

87.5% Canadian Superior Pale
4.2% Melanoidin
4.2% Crystal 15
4.2% Carapils

Hops:

1.4oz Warrior - 60 min (15.5% AA)
2oz Mosaic - 15 min (12.5% AA)
4oz Mosaic - Flame out (12.5% AA)

Going to play the dry hop by ear, will see how quickly it gets into kegs, may not need a dry hop. But if it does, will probably dose one keg with 2oz Mosaic and the other with 2oz Galaxy.

Ferment one carboy with WLP001 and the other with WLP090 at 62ºF

Mash at 150ºF
OG 1.052
FG 1.011
6.4 SRM
52IBU

Mosaic... is that the Super Citra you were talking about?

It is. It was a little pricey because I bought it by the ounce, but after reading that it was referred to as Super Citra, I had to give it a try. This bit of data also interested me: "Mosaic is the daughter of Simcoe and a Nugget derived male".

Thinking I'll likely add some gypsum to the boil for this one to sharpen up the hops a bit as well.
