Sorry LD, I just noticed your post now. I plan on mashing at 148F. The starter is on the stir plate now and plan on brewing it on Thursday.

I got this brewed up today. OG ended up at 1.086. I had a small taste of it and it tasted pretty damn good.

I upped the honey malt to a full pound, but otherwise went with the recipe in the OP. Looking forward to dry hopping this sucker with 3oz of Simcoe!

My OG without the sugar added is 1.086 so the plan is to add a bit more sugar to reach the 1.098 target.

Checked my FG tonight at it is sitting at 1.014 which puts this beast at 11.2%. Added the simcoe dry hop even though it smell amazing already!!!

I kegged mine last week and it's currently sitting in my ferm fridge waiting for a spot in the kegerator. I had a small taste of it and those Simcoe hops tasted and smelled fantastic.

I was lucky enough to have Hopslam on tap a couple of weeks ago, and if you guys are anywhere close to cloning this beer, I envy you for having so much available!

Unfortunately for me, I've never had one........so I really won't know how close my clone turns out to the original.

Mine has great hoppiness in both flavor and aroma but the alcohol got away from me at 11.2% so I have to let it mellow a bit.
