Flying Monkeys Cascadian Dark Ale Clone

Post by Woody » Sun Apr 14, 2013 10:34 pm

Need some advice. Going to be doing my first AG soon. Placed a large order with OBK last week so I should have my 15 gal pot, grain mill and other toys soon. I'm going to do BIAB and want to clone Flying Monkeys Cascadian Dark Ale. I know it's a Porter/IPA hybrid and there are recipes for Black IPA's on the site but I think this version is a little different. It's a pretty modest 35 IBU's and 6% abv. It's seems less dark with some ruby in it. I've looked all over the net for recipes but nothing seems close to their version. I think it would be a great crowd pleaser to have on tap and it's pretty damn tasty. I can only find the following on the Flying Monkeys site:
Muntons Crystal 240 L120
Muntons Brown Malt
Muntons Chocolate Malt
Muntons Roasted Barley
2 Row North American Pale (Metcalf and Copland)
Hops
1. Columbus (Bittering)
2. Cascade (Whirlpool)
3. Cascade Dry Hop

Any help to clone this baby would be greatly appreciated. I'm looking for the grain bill etc or how one would go about this other than by taste. Time to toss the training wheels and go AG. Thanks, Derek.

Use a program such as Beersmith, and use the listed ingredients and hops to hit the numbers listed on the site. Based on 6% ABV, 35 IBU and 22 SRM you can probably come up with something that will be close.

Here is my try, based on the numbers and ingredients given on the website and faint memory of this beer (tried one in Toronto in January), feel free to edit.
You will probably have to brew up few different versions where you make slight changes based on how close you get.

Boil Size: 6.74 gal
Post Boil Volume: 6.24 gal
Batch Size (fermenter): 5.00 gal
Bottling Volume: 5.00 gal
Estimated OG: 1.059 SG
Estimated Color: 22.5 SRM
Estimated IBU: 32.3 IBUs
Brewhouse Efficiency: 72.00 %
Est Mash Efficiency: 86.4 %
Boil Time: 60 Minutes

Ingredients:
------------
Amt Name Type # %/IBU
10 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 1 86.2 %
8.0 oz Brown Malt (65.0 SRM) Grain 2 4.3 %
8.0 oz Caramel/Crystal Malt -120L (120.0 SRM) Grain 3 4.3 %
6.4 oz Chocolate Malt (350.0 SRM) Grain 4 3.4 %
3.2 oz Roasted Barley (300.0 SRM) Grain 5 1.7 %
0.75 oz Columbus (Tomahawk) [14.00 %] - Boil 60. Hop 6 32.3 IBUs
1.00 oz Cascade [5.50 %] - Aroma Steep 0.0 min Hop 7 0.0 IBUs
1.0 pkg SafAle English Ale (DCL/Fermentis #S-04) Yeast 8 -
1.50 oz Cascade [5.50 %] - Dry Hop 10.0 Days Hop 9 0.0 IBUs

Cheers,
Jon

Thanks Jon! You sir are the man of men. I'll check out Beersmith for sure. Lot's to learn.
