Popcorn Cream Session Ale

This has been on tap at my place twice now and when the sun starts shining this is mighty fine to have in your glass. Plus you get to give your air popper a real workout popping an entire brew pale full of popcorn. This works very well with pearl, showcases the hope and the first wort hop quite nicely.

2.6 kg Pilsner Malt
.24 kg Cara-pils
1.5 kg AIR popped corn (no butter baby)

1.5 oz pearl first wort hopped

US-05

Give it 3 weeks in primary, rack to the keg and force carb. Enjoy starting week 4. I really like having an easy session on next to something bigger or more robust. If you brew one let me know how it goes - when I came up with the recipe there really wasn't much info around on using popped corn instead of flaked.

Very cool. The popped corn goes in the mash? What temp do you mash? Low I'm assuming?

It just dissolves into the mash, I've never seen anything like it. Just keep pushing and it'll all fit in. I mash at 154-155 ish actually - I like it with a bit of body as I usually toss in enough hops to make their presence known, though I usually do a fairly thin mash so you can still dry it out. The US-05 take it down to 1.009 for me regularly.

Yeah I've wondered about maxing out the diacetyl and seeing what would happen! It's a great one when the weather starts heating up so I usually brew it in the spring. :cheers:

Is this 1.5 kg of popping corn kernels that you pop yourself; or did you buy it pre-popped at a store? In any event that must be a very LARGE volume of popcorn.
I realize that it will shrivel down once it hits the mash water. Is this just a substitute for flaked corn?

here's potentially a stupid question, but if you took 1.5 kg of kernels, wouldn't they still be 1.5 kg after you popped them into popcorn? They wouldn't lose any mass I don't think

that said... that's a buttload of popcorn

They would lose moisture as it is the steam pressure that pops the kernels.

1.5 kg pre - pop weight. sorry it took a while for a response! I popped myself with an air popper. probably lose a bit of moisture when popping but stick with the pre-poppped kernels for weight and you'll be fine!
