Planning a brew for a friend's holiday party. This will be the first time I've used flaked corn and first time doing a high gravity style brew as well (brewing 10 gallons higher gravity to get 15 gallons into fermenters after topping up with water). If anyone has any tips, tricks, things to watch for, etc. I'm all ears.
OG: 1.046
FG: 1.009 (hopefully a bit lower, going to mash at 149ºF)
SRM: 3.5
IBU: 21
75% Canadian 2-row
25% Flaked corn
21IBU Warrior @ 60mins
1.5oz Cascade @ flameout
The flameout addition may just be a waste, but we'll see. Running with 3 different yeast strains: US-05, BRY-97, and S-04. All fermented around 60-62ºF.

I read the PC like loblaws brand beer, it wasn't bad it was a cheaper version of Richards I think back in the early 2000s

I remember that well. Superstore in Alberta carried it when I lived there.dexter wrote:I read the PC like loblaws brand beer, it wasn't bad it was a cheaper version of Richards I think back in the early 2000s

That looks fine.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.

Remember to account for lower hop utilization with the high gravity brew. (Also: 21 IBU seems a bit high for what I assume is a tasteless crowd pleaser, maybe.)

I retract my comment on high IBUs. Just checked Jamil's blonde, which is my go to please 'em beer, and it is right about that.
