Weizen mashup

Weizen mashup

So, never brewed this style yet, only bounced this on Dexter for his thoughts.

Just a mashup and tips welcome.

Recipe

2Row or Pilsner - 2.5kg
Wheat Malt - 2kg
Flaked Barley - 0.5kg

Sweet Orange Peel - 5g
Coriander - 5g

Tettnanger pellet hops - 25g (60 min)
Citra flower hops - 15g (2min)

Safbrew WB-06 Wheat Yeast - 1, maybe 2 pouches

My question is when should I add the orange peel and coriander, in the mash in a hop sock? or later in the boil? havent used these ingredients yet :)

Also with this style im aware that if fermentation temperature is too warm, it can give banana taste, which I want to advoid so I will be sure to keep it at 17-18c


Thoughts?

Add them with 10 minutes to go in the boil. Also, I'd recommend using Indian coriander which is slightly oval, as opposed to Moroccan coriander, which is round.

So orange peel and coriander, last 10 mins of the boil, in a hop sock, check.

anything wrong with my mashup of ingredients? ive looked at 7 or so recipes, put together what should be a Weizen, but with my flavor preferences :) Looking at putting this in the Garrison competition at the end of feb

I never used a hopsock. More of a witbier you're into though. Flaked barley and citra not really in there either.

As X said, the coriander and orange are characteristic for a witbier, not a Weizen. If you want to enter this in the Garrison contest, and want it to be judged favourably as a Weizen, do not add those ingredients.

Fermentation: That yeast should work for you, and the temperature range sounds correct for the beer temp (which, remember, will be a few degrees warmer than the temp of the room/chamber during the initial fermentation steps). Banana IS a characteristic of this style of beer, so don't fear it too much (personally I love a lot in weizens, but not everyone does). Clove will be more pronounced at lower temperature fermentation (also a positive characteristic of this style of beer), and a balance between those two aromas is key.

My thoughts on the comp: yeast choice and fermentation temperature are going to be what sets apart the winning beer this time around. The grain and hop bills are pretty simple, so the devil is in those details. Spend time perfecting pitch rates and temperature control to excel in this competition.

If I was going to enter, I would consider a step mash as well, maybe a decoction, and most likely some red winter wheat.

BCS one without step mash is in the fridge carbonating now. It'll be interesting to compare.
