I cobbled together a recipe for a Wee Heavy...looking for some feed back (pretty new at this - only the second time I've drafted up a recipe); hoping to brew this weekend.
I got some ideas for this from Jeff Smith's Off Kilter 80/-...also I took some ideas from the Brooklyn Brewshop book.
Here goes...
2.5 Gal batch size...
Water:
5.75 quarts plus 2 Gals for sparging.
Grains:
5.5 lb Maris Otter
1.0 lb Amber Malt
.75 lb Melanoidin
.75 lb Crystal (75?)
.25 lb Cara-Pils
.25 Honey Malt
.1 lb Roasted Barley
Hops:
.5 oz East Kent
.25 oz Brambling Cross (may need a substitute...Nugget?)
.1 oz Fuggle
Yeast:
1 pkg Scottish Ale Yeast
Botanicals:
1 oz Heather tips
Bottling:
1/2 cup Honey for bottling.
Cook Times:
60 min. mash at 152F
75 min. boil
Half the East Kents at 15 mins, remaining East Kents at 30 mins.
Brambling Cross (or Nuggets) at 45 mins.
.5 oz Heather Tips at 60 mins.
Fuggles and remainnig Heather Tips at 70 mins.

If you need substitute for bramling cross I would probably just use EKG. Bramling cross is a nice hop to have on hand though, nice for bitters

On tap: Nelson dry hopped Berliner/ Scottish Heavy 70-/ NE IPA
