Danstar Belle Saison Belgian Yeast
Anyone ever use the above yeast? Would like to use this for my next Saison batch instead of a smack pack due to the cost / hassle to get and was wondering if others have used it and if so how did their batch(es) turn out?

I've used it a couple of times. Fermented fairly high temps and they turned out great. In fact, the FG ended up a lot lower than I expected. Those were some fun beers

Springtime Amarillo 1.057 --> 1.000
Summer Saison 1.050 --> 1.001

Those fg's seem a bit on the low side, I've never heard of a beer finishing that low...
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.

I was surprised as anyone. Took multiple readings with same results. Fermented mid to high 80's if I recall properly. I'll try to find a link to an older post.

How was this with a high fermentation temp? I'm thinking about throwing on a Belgian IPA using this yeast until I get the temp control geared up on the new system.

Jimmy, mine dried right out at 80F. Which was great for a Saison of course. From what I've read this yeast produces a better flavor profile. I was thinking I could increase mash temp to try and keep it from finishing too low.

I made one using wl saison ii. started at 68f for a few days...ramped it to 75...80 and finally 85f....it finished at 1.006

Pitching rate seems high on this. It calls for 1g per liter of wort whereas T-58 calls for .5 to .8g/l

I brewed with this last week, and the gravity is right around 1.000 after a week. OG was only 1.034 though so I expected it to be pretty low.

I've got a saison brewing now, I used this yeast. It should be ready to bottle early next week; OG was around 1.046 and has been fermenting at about 75f to 77f.
