Cleaning up

Cleaning up my grain and hops inventory, looking for suggestions!!

75 lbs of 2 row
8 1/2 lbs of Crystal 60
2 lbs of Munich Malt
2 lbs of Roasted Barley
2 lbs of Chocolate Malt
2 lbs of Black Patent Malt
2 lbs of Coffee Malt

100 g of Hallertau 4%
100 g of Simco 12.9 %
200 g of Cascade 7.3%

Haven't decided on the yeast yet, but thinking of calling this a BrewNoser Dark. Need suggestions for the recipe, do your worst (best) guys. I can do 40 gallons batches, but prefer 20's. I'd like to come out with something dark, smokey chocolately, bitter, chewy, knock your socks off, never been done before sort of thing. Thinking of brew day two weeks from now.

Having a simple 2 row, crystal 60 with losts of Willamette and Cascade at the moment. Appreciate any suggestions.

You could probably come up with a nice American Stout recipe with that, maybe use the Hallertau for something else.

I agree with RT. Check out the Scoundrel Stout recipe in the recipes section. Haven't brewed it myself yet, but a couple of other guys have and have reported favourably on it.
